At Rollin Smoke we bring you our own special style of Texas Barbecue. We start with local post oak, the best seasonings money can buy, and quality meats that just taste better. We use fresh baked buns from New World Bakery and all the bbq is smoked on site in a Moberg Smoker for the freshest product possible.

Pulled pork sandwich, brisket sandwich, mac & cheese, coleslaw, banana pudding ALL FIRE! Not your traditional coleslaw either, very crunchy, the freshest coleslaw I’ve ever had! It actually reminded me of a light salad with a coleslaw taste. Both were great but I liked the brisket sandwich better than the pulled pork. Banana pudding 10 OUT OF 10!⭐⭐⭐⭐⭐The only thing I regret getting were the brussel sprouts. They didn’t taste how I wanted them too & needed some salt. To be honest everything else was so good I would still give it 5 stars! The outside dining area was set up nice & super spacious. I loved it especially being that we were there early & it wasn’t packed yet. The tacos in the picture were from the Michelin star food truck right across from here. Go check em both out!

Tucked into a quintessential corner lot, this Austin food truck isn’t just serving barbecue; it’s serving a certified experience. As a recipient of the prestigious Texas Monthly Top 100 BBQ Award, the expectations were high—and for the most part, they were met. The venue itself provides a fantastic, relaxed vibe, complete with plenty of TVs and a music stage, making it the perfect spot for chilling out on a lazy afternoon or settling in for an evening hang.

The Main Event: Pitmaster Excellence
The true test of a Texas BBQ joint is the holy trinity, and here, they nailed the fundamentals:

• Brisket: This was Texas BBQ as it should be. The brisket was super juicy, delivered a profound, deep flavor, and possessed a flawless, great bark that spoke to hours of skillful smoking

• Spare Ribs: A study in contrast and texture. The ribs offered a satisfying “good pull”—firm enough to bite but still falling cleanly off the bone. The thick, peppery bark was beautifully balanced by a slight sweetness from a pepper jelly glaze, adding a layer of sophisticated flavor you don’t always find.

• Pork Belly Burnt Ends: These were pure decadence. Each bite provided a delicious, melt-in-your-mouth experience with a distinct and welcome hint of Fierce Whiskers bourbon woven into the smoky, fatty flavor. They are so rich and irresistible, you know you shouldn’t eat too many, but good luck stopping.

• Jalapeño and Cheese Sausage: This locally sourced link brought the heat with a good level of spice. The flavor was excellent, though the texture leaned slightly toward the processed side, which was the only minor drawback among the meats.

The Supporting Cast: Sides
A great plate of BBQ requires sides that stand up to the meat, and while two of these were stars, one needs a little work.

• Mac & Cheese: An absolute winner. It was cheesy, creamy, and featured an excellent smoked flavor that permeated the dish. The slightly charred edges added a delightful textural counterpoint.

• Hash Brown Casserole: This was a surprisingly strong contender, offering a nice assembly of savory flavors. The secret weapon was the corn flake topping, providing an unexpected but welcome crunch, complemented by a satisfying hint of bacon.

• Creamed Corn: Unfortunately, this side was the weakest link. It tasted primarily bland, despite a slight peppery note. It desperately needs some fresh jalapeños mixed in to cut through the creaminess and add the essential Texas kick.

Final Verdict

The meat selection here is truly Top 100 worthy, excelling in technique, flavor, and execution (especially the Brisket and Burnt Ends). The atmosphere is perfect for a relaxed gathering. While the Creamed Corn missed the mark, the stellar Hash Brown Casserole and Smoked Mac & Cheese prove that their side game is usually strong. Come for the high-quality, authentic Texas barbecue, stay for the great outdoor patio.

Food was excellent! I ordered the pulled pork sandwich and loved it so much that I got it again on my second visit. The brisket was also really solid, and the fries were delicious, definitely something I’d order again. The mac & cheese wasn’t my favorite, though it might’ve just been that batch ( a little dry).
Service was quick and easy: you order at a window and get a text when your food is ready to pick up. I was visiting Austin, and the place had that perfect Texas BBQ atmosphere.
I went on a Friday around 4:30 pm and it was pretty relaxed, but when I came back Saturday around 5:30/6 pm, it was packed with a fun 25–35 crowd all dressed up. The vibe was great, lively, social, and a perfect spot to meet people (I even met the cutest guy ever!). Definitely recommend if you’re in town.

Absolutely crushed it at Rollin Smoke BBQ inside Chalmers! I got the lemon pepper parm wings—crispy, smoky, and packed with flavor, easily some of the best wings I’ve had. My partner went for the brisket tacos, and they were next-level tender and juicy. Everything was straight fire. The woman at the front counter was super welcoming and friendly (and yeah, total vibe), and the cook was chill as hell. Cool spot with great energy—highly recommend if you’re in East Austin!

Great food.
I recommend trying the brisket (lean) with a side of smoked Mac n cheese.

It’s located inside of a sports bar with plenty of outdoor seating and tvs to catch a game.

My only criticism is in regard to tipping after the transaction. It is defaulted at 22% with an option to tip less while the clerk is holding the device. I bring this up because I had a hard time explaining this to an international friend who was confused about tipping culture. My stance is that 20%+ is standard at sit down restaurants when a waiter is actively serving you, refilling drinks, etc.

In my experience at Rollin Smoke, a friendly person took my order and I was buzzed when it was ready. Then I retrieved the food.

My only rationalization for a tip-forward transaction is that employees may not be compensated enough. If that’s the case, I am happy to support (and did). If not, I suggest revising the system.

Amazing food. Their G-Thang burrito and quesatacos are out of this world! All the meats are to die for and you gotta get the boozy brussels when they got them on special! My fiancee and I had an amazing experience from the customer service to the food, and the overall ambiance!

The best barbecue I’ve ever eaten – coming from a native Texan! We had the brisket sandwich, the Silky sandwich, ribs, and fries, and we recommend all of them. They were all incredibly tender and paired perfectly with the toppings, the fries were also perfectly seasoned. James was so kind and accommodating; he switched the channel on our request and even gave us waters on the way out. No need to be worried about the heat, as there are fans in the big seating area outdoors where they have plenty of screens. Overall a perfect visit and we’ll definitely be back for our next Austin trip, thank you Rollin Smoke and James for the food and service!!

Y’all! The burnt ends were freaking amazing!!! We shared the bbq chicken plate with bean & potato salad. So good! Go…just go. Great vibe at Chalmers with tons of tvs, indoor and outdoor seating. Lots of covered and misted areas. Great for football or upcoming World Cup. We went on a hot Sunday. Dj was spinning some great tunes.

Overall it was below average.

The brisket tacos are good/not bad, good basic brisket flavor. Safe choice.

The burnt end tacos were a miss. Odd texture and flavor. Didn’t taste fresh, something was off. Didn’t finish it.

The smoked Mac and cheese also tasted odd. Had a lot of cheese and a lot of effort to add smoky flavor just didn’t come through on the taste buds. End up with a strange tasting Mac n cheese. Didn’t finish it.
