The staff was really friendly and welcoming, and I truly appreciated the great customer service. However, as a Louisiana native, the food was nowhere near authentic Louisiana cuisine.

We ordered the 6-pack appetizer and unfortunately, we were not fans. The boudin balls had no seasoning at all, which was really disappointing. I also ordered the gumbo, and there was no real roux or broth it was mostly rice and meat, almost like it was trying to be jambalaya instead of gumbo.

My husband ordered the “swap” sandwich, which was basically like a spaghetti po’ boy, and that wasn’t good either. I had the shrimp po’ boy, and the remoulade sauce completely overpowered and messed up the sandwich.

Overall, great staff, but the food just didn’t deliver authentic Louisiana flavor.

For their first night as a brick and mortar establishment on a Fat Tuesday – they knocked it out the park! Walked in and was able to get a seat at the bar in under 20min and our bartenders were the nicest I’ve ever encountered… Tanya and the 2 other girls behind the bar made sure we were taken care of with food and sweet tea all the way to Amy running our food. There’s definitely some first order of kinks to smooth out but I do hope this will be a frequent stop for us 🙂

Roll Cajun Boudin is seriously some of the best food I’ve ever had. I’m legitimately going to be thinking of the egg rolls for the rest of my life. Matt is a great guy and you can really sense the pride and love he puts into his recipes. My only regret is that I have to go back to my home state and wait who knows how long to eat it again. Thanks Matt! I appreciate you more than you’ll ever know. As good as your food is, you’re an even better person brother.

Amazing find at the North Pole Expo in Trussville , Alabama.

The owner let me try a sample of the Spinach Articheaux, this had good flavor from the spinach and a nice crunch.

I decided on the Jamblaya. The dish had it all, great flavor, rich base and just the right amount of heat to keep the proteins as the star.

I also indulged on a piece of Southern Kin Cheesecake. Smooth and not too sweet this dessert was an additional hit.

I think they might be opening a brick and mortar in Birmingham. If im ever back in the area, I will find Roll Cajun Boudin.

The food came out so quick! And it was DELICIOUS! They have a restaurant coming in the Spring and I already know my boyfriend and I will be a regular. While we were eating the owners came out and talked to us and had great conversation. Some of the nicest people I’ve met, I’m so excited for this to come to our Birmingham city!!!

Matt & Roll Cajun served my school (Hueytown Middle School) today for our monthly faculty/staff food truck day.

The ambiance/theme of the food truck is great!

The food is awesome!

Matt is very personable and I appreciate that!

He promised it would be and pleasant experience and he delivered.

Atmosphere was great; giving slower side of bourbon street vibes.
Waitress was on point communicating and checking our needs.
Only complaint we have was the wait time from the kitchen. We sat and waited a good 30+ minutes for our food; a shared appetizer and and entré each. Please know that it wasn’t what I would consider busy for a Saturday evening with live music; despite the rainy weather. When the food came out, it was served within 5 minutes of each other, served on a table for two. It was a bit tedious for us to manage all of the plates/bowls on that size table.
The food was hot and delicious, despite the wait. *Adult* drink menu was somewhat limited due to having just acquired their liquor license. We will give them another try in about a month to give them time to further get their bearings and will update review then.

I can’t begin to describe how delicious everything is here! See photos to see what we tried – gumbo, bisque, EGGROLLS (LIFE CHANGING), cheese cake, boudin balls – ALL HOME MADE Not your typical food truck either – it felt like we were on a restaurant patio. There’s nothing like it in Bham!
If this truck is near you- go try it and honestly worth the drive if it’s not! YUM.
