I live in Philadelphia, and I have endless choices of Italian pizzas made with genuine whole milk mozzarella. Prior to Philly, I lived in Mexico full-time, for three years. The shredded cheese they sold in their grocery stores (Ley, Mega, Sorriana…even Sam’s Club) was an imitation blend sometimes mixed with Gouda. Yes, they sold mozzarella, but it was more expensive because it was usually imported. So, the imitation blend was everywhere and it was also what most of the local pizzerias used. If the pizza was piping hot, fresh out of the oven, the imitation cheese was fine. However, if you had leftovers and reheated it the next day, it turned into some kind of waxy, Elmer’s glue like layer, and it tasted like it! Two or three bites, the plastic taste was just gross. You threw the leftovers out.
When my Conquistador pizza arrived via delivery, I immediately noticed the cheese was just too white…not natural or oil separation like real cheese gets when it melts. However, the pizza was fresh, and it tasted great.
Then, a day later, I heated up a couple of left over slices, and the Elmer’s Glue taste brought back all those gagging Mexico pizza memories. Gross!
It’s a real shame, because the crust and all of the other toppings were top notch. It’s like going all out on a top of the line Mustang GT, but cheaping out with $39 tires from TireRack.
Start using real mozzarella, and your pizzas will be worth five stars.
