
Risette is a tribute to the lady of the house. It is an informal fine dining Restaurant set within the elegant Casa Ellul, in the heart of Valletta. The kitchen is led by Chef Steve Scicluna, previously working in Michelin star restaurants such as the Clove Club in London and Chapter One in Dublin. With an emphasis on using the freshest produce, Risette’s menu changes weekly. The menu combines cultures and methods into dishes which express Steve’s passion for flavours, with cuisine being a French base with Japanese technicalities and ingredients. This selective a la carte is complimented with attentive detail to the fine produce that he chooses to include in his dishes.

Good fine dining, nothing mind blowing but also no bad dishes. The stuffed chicken wing was the stand out dish with the pork being one to miss. It’s certainly not a bad restaurant, far from it but it’s not somewhere I would whole heartedly recommend with plenty of great options available.
Rarely is the palate moved to such emotion, but in this culinary sanctuary, every bite is an echo of wonder. To visit Malta and not surrender to dining in this place would be a lament that would haunt the soul through the years.
From the first welcoming gesture, the majestic architecture embracing the space, the delicacy in every service detail, the exquisite curation of the cellar, and the symphony of dishes… here, everything is orchestrated with a precision that borders on the sublime.
The pairing is an ancestral dance, a perfect ballet where each step merges wine with culinary creation, unleashing an explosion of the senses. Textures, ethereal and bold, alongside flavors from distant constellations, transport the spirit to unknown spheres.
Sabrina, the head sommelier, weaves with her words a tapestry of knowledge, unveiling the hidden essence of each dish and, of course, the liquid history of the wines that dance in perfect harmony with them. It is a revelation, a masterclass that elevates dining to the category of art.
I had the privilege of dining at an Aldo Conterno wine dinner at this restaurant last night, and the experience was exceptional from start to finish. The food was truly out of this world — every dish beautifully crafted — and the wine pairings were absolutely flawless.
This wasn’t my first visit, and I can confidently say I’ve never been disappointed. The consistency, quality, and passion behind every detail really stand out.
