Rio Grande Mexican Restaurant is a true taste of Mexico right in the heart of Boulder. From the moment you step inside, you’re transported to a vibrant and lively atmosphere that perfectly captures the essence of Mexican culture. The colorful decor, festive music, and warm hospitality create an ambiance that’s both inviting and energizing.

This was my first time visiting the restaurant and I enjoyed the cozy atmosphere and a nice view on the mountain. I ordered a chicken tortilla soup and mini mahi mahi taco , as well as salad with greens, tomatoes and avocado . The soup wasn’t very good and the chicken was too rubbery and I left it on the bottom of the plate . I did like the fish taco and the salad . My Server was very good !

Stopped in for an appetizer before having dinner elsewhere. The Chili Con Casio was very good and reasonably priced. Our server was spot on and friendly. We also enjoyed the unique decor inside the restaurant. If back in town again we would certainly like to try some of the main entree’s.

The environment is very appropriate and relaxing. I usually get the shredded chicken burrito and nachos as an appetizer. I will say, there are way better burritos out there but theirs got the job done too! Nachos were good as well.

The cheese is definitely velvita cheese , not queso . The rice didn’t have any seasoning, and certainly not authentic tacos, remember , no color no flavor . We were never offered any silverware , and when the queso came they didn’t bring any chips. They didn’t even fill the burrito or take the time to melt their frozen cheese on top of the burrito lol.

This place has some of the worst fish I’ve ever had in my life. The mahi was straight up expired and disgusting. I couldn’t finish it. The margarita I got was extremely smokey but not a mescal. It was the skinny Marg. So why was it smokey?? Bartender said something about maybe it’s the limes, how rancid do limes have to be to taste smokey? Super bad experience overall. I actually have no problems with never coming back. . For some reason the restaurant contacted me regarding this review. But they didn’t respond to my email I sent back to the representative. So the response below is them publicly appearing like they care but really do not care about your dining experience at all.

The Rio isn’t what I remember it to be years ago. Maybe it’s cuz I was in college and going there Thursday for cheap manberry margs. Don’t worry, the margs are still fire. The management was poor thou. The food was fine/okay. The rooftop was a bit dirty TBH. Bathrooms were definitely dirty. We were there on a Saturday
