During our recent visit to Vail, we had the pleasure of dining at Revel, nestled within the elegant Hythe Hotel. From the moment we arrived, the experience was nothing short of exceptional.
The highlight of our evening was the Colorado Fitch Ranch Filet Mignon, a masterpiece crafted by Chef Ed and his talented culinary team. This 6oz prime filet was served Oscar style, adorned with delicate crab, velvety tartiflette, charred corn purée, and crisp asparagus. The presentation was stunning—each element thoughtfully placed, creating a visual and gastronomic delight. The filet was cooked to perfection, tender and flavorful, complemented beautifully by the creamy textures and fresh, seasonal accompaniments. A glass of red wine completed the pairing, elevating the dish to a truly luxurious experience.
Equally impressive was the service. Our bartender Jason mixed cocktails with precision and flair, setting the tone for a relaxed and enjoyable evening. Kevin, our waiter, provided attentive and knowledgeable service, ensuring every detail was taken care of with warmth and professionalism.
Revel is more than just a restaurant—it’s a celebration of Colorado’s finest ingredients, hospitality, and culinary artistry. Whether you’re a local or visiting Vail, this is a dining experience not to be missed.
The other issue was that the pricing on the menu was not accurately reflected in the bill. The sea bass was priced at $50 on the menu but $60 on the bill, and we were told the special was $40 but on the bill it was charged as $50. Additionally, the gnocchi was shown to be $38 on the menu but $40 on the bill. The menu stated that a gratuity would be charged for parties of eight or more, we were a party of six. However, on the bill, we were charged a 20% gratuity.
The staff corrected the bill to accurately reflect the prices on the menu, as well as noted they would fix the allergen mistake. Just be sure if you dine here to check your bill and the ingredients if you have allergies.
Started off with a few cocktails all of which were perfectly balanced. The Gothic Line was particularly good.
Had the lamb , elk and beef. All very delicious and large portions.
Service was on point.
I was weary after some of the recent negative reviews but this place was excellent and we will be back !
The atmosphere is fantastic, very modern and clean.
This would be the perfect place to come for a laid back apres of you’re not into the loud dive bar scene.
Was surprisingly chill this evening. This place deserves to be fully booked .
The breakfast at Margie’s Haas was exceptional, the most delicious egg benedict with salmon I’ve ever had. The breakfast buffet was 5 star as well, very good selection with their gluten free muffins.
Dinner was okay, ordered sandwiches, salad and wings. The bruschetta salad was pretty good, the rest of the food was just okay. They were very busy at the time, so the service took forever, it was Christmas Eve. But because we stayed at the hotel and we had nothing else to do it did not bother us. We enjoyed the live music.
Cocktails. Did not like their selection at all, I feel it was all 40+ focused. Nothing light, each cocktail had hard liquor. I wish they had at least Aperol Spritz or something lighter for younger people who doesn’t drink whiskey
