Olivia is the second project from chef Ty Leon, beverage guru Austin Carson and hospitality maven Heather Morrison. My partner and I visited Restaurant Olivia with high hopes of a fabulous experience. We knew the restaurant had recently been recognized by James Beard for their superior hospitality and could not wait to try it for ourselves. Our expectations were exceeded as we were wined and dined with the upmost hospitable service from Miss Sue Brown. She ever so elegantly guided us through the menu providing personalized recommendations, tailored to our preferences. Sue is incredibly knowledgeable of the menu and shared how each item was uniquely crafted. We could hear the love and passion in Sue’s voice speaking about the chefs bringing the creations to life. We tried several different offerings, each and every dish was plated to perfection with outstanding fresh flavors. Our dining experience was the best we’ve had in years but Sue is the real treat. She made sure our time at Restaurant Olivia was one that will never be forgotten.
Along with the lovely service provided by Sue, we had a warm, welcoming experience from the moment we entered the space. We were greeted immediately upon arriving and promptly escorted to our table. The ambiance of the space is both elevated and relaxing. The sommelier did an excellent job helping us select a bottle of wine that we would both enjoy and took care of us all evening. The entire team of Restaurant Olivia provided silent service with a smile. It was flawless. My partner and I were able to have a romantic evening without ever needing to ask for a thing. The ability to anticipate our needs were next level hospitality. I am looking forward to seeing Restaurant Olivia earn a Michelin Star in the near future.

We came here on a whim a few years ago for my birthday when we were lucky enough to snag a reservation, and ever since this is far and away our favorite Italian restaurant. Every plate is divine, the service is always immaculate, and we always have an incredible time. We love that they change the menu so we can come and try something new every time. I worked in NYC for 20 years and have enjoyed amazing Italian food. Whenever I leave NYC I am always looking for excellent Italian food which is harder to find than you would think. Restaurant Olivia is amazing and as good or better than what I had in NYC! The focacia bread is always excellent. We had a pork appetizer that was perfectly cooked and seasoned. The pastas were incredible as always. I had the bolognese and the rigatoni. A secret if the server does not tell you is that you can choose two half order pastas if you can’t make up your mind about just one. We have been many times now and the service is excellent, friendly and the cozy ambiance of the room just perfect for what Olivia’s does.

Had a great time here with friends on a Saturday evening. The staff were great, especially the sommelier, who helped us pick a fantastic Nebbiolo that paired so well with all the hand made pastas we selected. Their small plates were also very good – my favorite was crispy pork terrine. All around a great restaurant and dinning experience!

Our social club went to Restaurant Olivia in August of 2025. We had a group of around 15. I had heard so many good things about Restaurant Olivia and had so many requests for this one. Unfortunately in our experience the service didn’t live up to the the experience I heard so much about. The main issue I took with our experience was that our reservation was at 7pm. With half the table arriving between 6:50-7 and already seated at the table when I (the host) got there. The last guest probably arrived around 7:10 at the latest. Our first course didn’t hit the table until 7:55 almost an hour after our reservation. We had a preset menu for the evening so everything besides drinks was chosen ahead of time. Thus why it’s tough for me to understand why the food took so long. As the host of the event this directly impacts my business and the way guests enjoy my events when they wait almost an hour for food unexpectedly. It was embarrassing to have guests start to ask me (the host) where the food was. I personally would not return unless it was with a small group. Overall it was a disappointing experience and left a bad taste in my mouth.

My friend and I celebrated at Restaurant Olivia and it could not have been more perfect. From the moment we sat down, everything felt special without feeling overdone.

We started with a little bubbly and the fresh bread, which was warm and absolutely perfect. For dinner, we split the tagliatelle and the ravioli. Both were incredible, but the French onion ravioli was especially memorable. Such a unique dish and so well executed. It is hard to beat.

We finished with espresso and the cookie ala mode, which was the ideal ending to an already amazing meal.

Our server, Sue, was attentive, personable, and truly made the experience even better. I will absolutely be back.

This is a truly special place!! My absolute favorite restaurant in Denver. The food, service, and atmosphere are all top-tier. For a party of two, I recommend ordering two starters, two pastas, and two desserts or going all in with their tasting menu, you won’t regret it.

Be sure to make a reservation! Before our meal, we were asked about any allergies or dietary restrictions, which I really appreciated. Kayla was our server and she went above and beyond, an absolute gem. That said, every staff member we interacted with was exceptional.

After our experience eating at Restaurant Olivia, I understand why the staff was recognized by the James Beard Foundation for Hospitality. Every individual went above and beyond to provide a warm and inviting atmosphere from beginning to end. Our dining experience was especially exquisite largely thanks to our server for the evening, SUE. From the moment we were seated, Sue expertly guided us through our dinner. She was highly knowledgeable and thoughtful while describing various dishes on the menu and assisted us through navigating what to order, so we were able to try a variety of the menu items. The food was beautifully presented, flavorful, and balanced. Every dish felt intentional and crafted with care. The wine pairing for our dinner complemented every dish on the table.
Sue anticipated all of our needs before we ever had to ask for anything. She also had several other guests and tables, but never missed a beat. Each of our dishes were coursed out and impeccably timed. Every table touch felt genuine and effortless. She is a professional in this industry and you can feel the passion and pride in the experiences she manages to curate for her guests.
What truly set this restaurant apart was Sue and the rest of the staff. You can tell each individual shows up and puts in the hard work because it shows in every detail. Their attentiveness and genuine hospitality created an atmosphere that cannot be manufactured. Hospitality is about how you’re made to feel and thanks to Sue and the rest of the staff, we felt welcomed, valued, and eager to return.

Pretty good experience. Did the wonderful tasting menu with my dad and girlfriend and it’s true the sommelier is incredible. Biggest bummer was I wish they acknowledged my birthday that I told them about, it was my 30th which is a milestone, but the food was great. I wouldn’t go here for a special occasion if you want it to feel special, but good for a night out.

I love Restaurant Olivia! We go here 1-2 times a year for special occasions and Olivia always has the best service. The staff takes note if you are celebrating something and always makes it very special. This is some of the best Italian food I have had in Denver and the drink options are great as well. Loved the professor plum mocktail.
