An exquisite culinary journey, a fascinating history lesson, and a feast for the eyes, neatly fit into a 2 1/2 hour meal. We were delighted by our experience at Républica. Truly a restaurant worth traveling to visit. We were fortunate enough to experience the 9 course tasting menu. We opted for a bottle of sparkling Alsacien rosé that paired perfectly with every dish.
Everything we ate was delicious, riding a balance of homey flavors and fine dining presentation. I was awed as I was comforted. Nothing was too rich or upsetting to the digestive system, making it a genuinely thoughtful experience.
The service was super friendly and interactive, we were want for nothing. The restaurant space is sleek and chill. The room was a great volume and equally great vibe.

We had an absolutely incredible Chef’s Tasting tonight. Every course was masterful, but the standout had to be the beef short rib, perfectly crusted in panko and paired with an unforgettable mole sauce. To put it correctly , it was a symphony in your mouth (to be politically correct ).
Each of the seven courses was magnificent. Who knew carrots could be a star of a dish? They easily took a close second, vibrant, flavorful, and beautifully balanced. In truth, 6 plates shined. The chef’s mastery of corn and mole sauces was nothing short of exceptional.
The oyster course was brilliantly composed, a perfect harmony of sweetness, acid, and heat that arrives right at the end. Every bite told a story.
The wine flight pairing elevated the entire experience, with each glass perfectly chosen to complement its dish. It was a true culinary journey, an experience and a delight.

Please please support this Portland Diamond. What a great heart of gold from owners Angel and Olivia. We did the tasting menu tonight. The meal was stunning. Each of the courses came with a story, education, and presented by the staff and owner. The attention to every detail and the diners experience was 20/10. We are both gluten free and my partner OSS also dairy free. They made dairy versions of the dish just for him. No words at the love and sadness that i didn’t discover then sooner. I really wish we can all save this beautiful communal restaurant by showing our support.

As someone who ate at República, and its sister restaurants, not once but many times, and appreciates the art of crafting a masterpiece on a plate, I can by far say that the food I have enjoyed there has been some of the most memorable in my life. Angel, the owner, and his team always excelled in customer service. We are greeted like family every time we crossed their door. People complaining about the price, clearly don’t understand fine dining. You can’t put a price on an experience, and that’s what they want to bring to us. History, storytelling, and a little bit of México in every masterfully executed dish. República will forever live in my heart.

This was my choice for my special birthday! We had a large group of 8 and it was not an issue whatsoever. We picked the testing menu experience and half of us opted for the drink pairing option. What an amazing adventure that was: In the course of 3 hours we we presented with amazing array of traditional and modern interpretations of Mexican cuisine. Delicious , intricate and spicy this variety of flavorful morsels took us on a journey aptly narrated by a friendly and knowledgeable staff. In my opinion some of the wine pairings ( as delitful and refreshing on their own) could not stand to the intense flavors of the presented dishes. They were all very good wines! It was on the pricey side, but very well worth it!

Incredible. Delightful. A flavor journey. The food, cocktails and service were the best of the best. República has earned its place in my Portland favorites, and you know how good the food is here! The chefs and staff are clearly passionate about Mexican food, and I’m grateful that they are sharing their knowledge and talents. This restaurant is not to be missed.

From start to finish, this was one of the best dining experiences of my life. I went with the tasting menu, and every single course was a masterpiece. The flavors were perfectly balanced, beautifully plated, and thoughtfully explained by the staff. The drink pairings elevated each dish even further, showing the same level of care and precision as the food.
What stood out most, beyond the incredible flavors, was the attention to detail. The service was warm, professional, and attentive without ever feeling overbearing. Every aspect from pacing, presentation, to the overall atmosphere was seamless and clearly executed with pride.

My partner and I experienced the tasting menu — it was full of interesting textures, varieties of spices and vegetables, and bursting with flavors. The service was prompt and attentive. Can’t think of a better way to have spent our 10 year anniversary. We will be back!

I really wanted to love this place, but I was really disappointed. Some of the food good but a lot of it was really just OK. My biggest complaint was the service was terrible.
I arrived a few minutes before the rest of my group and they went ahead and sat me. I was not offered any kind of drink while I waited for the rest of my party to arrive. It’s a small greveince but those small things really added up over the evening and ultimately ruined our experience.
The menu was confusing. Our host/waiter was very sweet but he seemd nervous and somewhat unsure or the menu himself. I assume for the full experience you ideally want to choose the, “dinner for 2” tasting meal. The rest my party was not super into this idea because they all wanted the flautas. We asked our waiter exactly what came with the dinner for two and he said the flautas. So I got my whole party to switch from ordering individually to the “dinner for two” because they would also get the flautas.
Do you what they never brought us? The flautas. And when I asked for waiter about it he was like, oh its because we gave you the duck instead. Well, we specifically asked for the flautas and were told that’s what we were getting so the switch to the duck was not ideal. Especially considering it was the worst thing we ate.
Our waiter also said that because we were a party of 5 he recommended adding an ala carte dish or two. We said great lets do that. He said he’d come back closer to the 2nd course to get that order. He never came back. In fact we were hardly check on at all. I had one glass of wine and couldn’t anyone to get me more. After our last course we just say there staring at each other, all with empty wine glasses for 30 minutes just waiting for our check. They then brought us dessert and the wrong check. We knew it was wrong because, to add insult to injury it had flautas listed on it.
