found Rebel Rise on TikTok and knew I had to stop in for my son’s gluten-free girlfriend. I came in on Valentine’s Day, and the sweetest girl behind the counter helped me with everything. I told her I found them on TikTok — and it turns out she’s the one who does their social media!
Such a cute spot, and everything was perfect. My son’s girlfriend was SO excited about the treats that they ended up having their Valentine’s dinner there. Highly recommend!

My first impression of Rebel Rise was very positive. Jude, at the front counter, was thoughtful, attentive to client needs, gracious and friendly and the variety of gluten free goods available was delightful. It’s quite a unique experience when you have a wheat allergy to walk in and not be limited at all, and it all looked so beautiful and delicious. They also had some items that were dairy free, too!
Today, I chose the all-you-can-eat charcuterie board. For the first time in years, I had crepes (which left nothing to be desired… they were delightful) and so many other tasty things (worthy of special note were the crepes, biscuits and gravy and cinnamon roll. Chef’s kiss!).

Almost all of the reviews on here are super positive so maybe we just visited on a bad day, but my husband and I felt very awkward as soon as we walked in the door. We weren’t greeted and in fact the woman behind the counter seemed bothered by our presence. There were very little baked goods to choose from even though it was only 8:30 in the morning. There was no menu to look at and the employee never asked us any questions or offered up any information such as everything is gluten free (which is great!). My husband really liked his S’mores bakery item that he bought. The bistro was decorated so nicely it’s a shame we didn’t feel comfortable enough to stay and enjoy it.

I went to Rebel Rise for the first time today and their food was amazing!! I got recommended the raspberry crepe so I tried it and holy moly it was amazing!! I haven’t had a crepe in years due to my celiac diagnosis so it was really, really cool to be able to eat something like this again. I also grabbed a cinnamon roll so I’m really excited to try that as well. Thank you all so much! Your restaurant made this celiac person feel happy, included, and normal for once. Keep your chin up and keep doing your thing!
Also, as a neurodivergent individual, I loved the inside of your restaurant. The lighting, the low sound, the neutral smell. It made this ND person feel at home. Thank you for such a wonderful experience!! I’ll definitely be back soon.

This place is heaven on earth. Everything I purchased was DELICIOUS and good without even considering it’s also gluten free. It’s so good! The cinnamon rolls are worth driving hours to purchase! Wow! Adorable decor. The owner is kind, caring and salt of the earth. Omaha is lucky to have this business in operation!

I Have been getting sourdough from Beth for a few years (pre brick and mortar location) and also took her very first sourdough class in her home. Her sourdough is amazing but be prepared for it to be more moist and chewy than you might expect (in a good way). Id suggest getting it unsliced. It’s great toasted with butter and jam or just toasted with nothing on it!!
I am also dairy free and have been very happy with the DF/gf chocolate chip cookies and gf/df cinnamon rolls. I tried a chocolate gf/df cupcake today and even after letting it fully warm up to room temp it was dry and lacked flavor. I was bummed so- I’ll stick to the bread, cookies and cinnamon rolls.
I’m Happy there is a bakery where I can go and get stuff that I know is safe. Dedicated, yummy gf/df items come with a price and rebel rise is no exception- their products are a bit of a splurge but I’d wager to say knowing I won’t get sick when I eat there is invaluable. PLEASE FREQUENT THIS BISTRO!! I love that Omaha has a dedicated restaurant that is gluten free. The city is so far behind in this department. What I also love about this restaurant is that there is plenty of protein in their meals as well. So both of my nutritional needs are met. The place is cute and clean and just a pleasant surrounding. The gals at the front register are friendly and helpful.
My first couple times that I’ve been there I was head over heels as to how much I loved this place.
The last time I was there they took a long time to prepare one of our meals. I felt that was unacceptable, but the rub is on a very new restaurant they are feeling there way through change of workers and I truly understand that. The owner came by and gave us our money back for our meals, so through the midst of her difficulties, she compensated.
The pastries are to die for and those blueberry scones, well, nothing compares.
I say they are trying there best, as it has only been a couple months that they have been open. Please frequent this shop, because we do not want to lose a dedicated gluten free bistro!
And I’m saying prayers that they move through the “new restaurant” difficulties.

I have tried many different gluten free bakeries and in my opinion not one comes close to Rebel Rise. I’ve tried a cake slice, blueberry muffin, pumpkin bar, and cinnamon roll. Each was a wonderful balance of sweet and seasoned. The crumb was perfect, texture exceptional, and each bite moist. The front counter employee was friendly and the owner popped her head out from the kitchen to say hello and answer questions. I will be returning for more soon!

I have been looking forward to trying out Rebel Rise and today was the day! We were planning on taking cinnamon rolls to go but ended up staying for lunch. I have Celiac and chose the chicken pot pie which I haven’t had in 23 years. My 2 non Celiac kids had the same and all 3 of us give it rave reviews. We took some sourdough bread and brownies home and all were so good as well. Next time I will get more cinnamon rolls as they are the best I have ever had. The owner and employees were so kind and this business is a treasure that Omaha is lucky to have. Walking in and seeing the menu knowing everything on that menu is safe for me is a feeling like no other. Thank you Rebel Rise and we will be back!

The wait is finally over, for years my family has looked for gluten free options, from dry biscuits to unfulfilling slices of bread on sandwiches. Today we tried Rebel Rise for the first time and have found our new favorite bakery. Everything was so good and there was more options than I have ever seen in a gluten free section before, the gluten free section being EVERYTHING.
An hour and a half drive for a plate of biscuits and gravy was more than worth it, the cinnamon roll was a delight and the service was phenomenal!!
I insist everyone who has a gluten intolerance or allergy to try it, and I encourage everyone who doesn’t to try it as well. Wish I could do 10 stars.
