We attended Raw Lab for the first time last night, we booked four seats for a company Christmas party and the sad thing is, we will never be able to top last night’s experience for the remainder of Christmas parties in our company’s future.

To describe the night in a word, I would say incredible. The food was delicious, wines paired extremely well, and the service was a blast. You can tell how much Kevin and sandy enjoy getting to do what they do.

Sadly, we will never be able to go back because it is closing, but we will be on the hunt for the next city Kevin opens in and will travel to do it again!

Kevin thank you so much, and I hope your future endeavors outshine what you’ve done in Charleston.

This is an educating, enjoyable and tasty multi-course experience you have to try when in Charleston. This is not your typical dining experience, it’s a new kind of dinner theater. I believe the menu changes regularly – our experience was centered around oysters, caviar, raw seafood combined with salts from around the world and lots of wine. We learned that we’ve been eating oysters and caviar wrong for years, and were introduced to a variety of salts on raw dishes that was amazing. I try to stay away from salt, but learned I just need the right kind on my food. I’d highly recommend the experience for couples and small groups – there is limited seating so reservations are a must. Also, make sure your paying attention. It’s interactive, but you don’t want to be that person interrupting/ talking over the chef.. a little self-awareness and the right attitude make Rawl Lab an awesome night!

Still buzzing from the amazing night at Raw Lab last night! From the food to the lighting, music, vibes I can not recommend this experience enough! Every single part of last night was 5 stars! Kevin is such an amazing, chef, dj, comedian all in one! The energy in the room was immaculate thanks to Kevin and Sandy and everyone was friends by the time the 4 hours was over! If you are looking for a once in a lifetime experience- BOOK THIS! Worth every penny

This was the best night of my life. We are such foodies and to have THIS kind of experience was literally killer. We had the most enjoyable and entertaining 5 hours, being enveloped in music, delicacies, so many wine pairings, and the electric atmosphere. If you’re reading this, go! You will not be disappointed. We learned so much and we’re encouraged to be able to add a lot of these techniques and thoughts into our own repertoire at home. Kevin and Sandy – BRAVO! I’d give this 100 stars (or oysters) if I could. Bangin’ good time.

Raw Lab was the most unique dining experience we have ever had. If you are on the fence about making a reservation (like we were) take the time to read reviews and peruse the website. Kevin spent a lot of time putting together expectations of this experience. Dining at raw lab is more like attending a show than it is a ‘fine dining’ or omakase experience. Be prepared to interact with your fellow diners (the room seats 12 people) and don’t be afraid to get out of your comfort zone. Kevin has created a wonderful space with great ambiance, comfortable and he facilitates a lot of fun throughout the four hour meal. The oysters were some of the best we have ever had and we learned a lot about caviar.

A few other notes and some critiques:
– Raw Lab is NOT for everyone. Only attend if you are prepared for an experience that is more about being social than it is about food.
– You may be wondering (like us) is it worth the price? YES. Again, think of this like attending a show. Kevin is definitely a showman who knows how to capture an audience.
– The substantial food you will eat for the ‘meal’ is nothing to write home about. Three of the courses went more or less untouched by the entire group of twelve. Kevin owns the fact that he is not a chef, but this is the biggest piece that could use some work.
– This is not an experience for a wine connoisseur or someone looking to learn more about wine. It is more about drinking and socializing than wine pairings crafted for each course. The set up of the experience leads to a pressure to ‘finish your glass before the next bottle is opened’.

Overall, we enjoyed our experience at Raw Lab and thought it was worth the price. If it is going to last long term/entice people to come back I think some more needs to be done with menu/recipe development.

Kevin’s presentation and servings are wonderful, magical and extraordinary. You really have to experience it to appreciate all that goes into this very unique experience of seafood and entrainment that will dazzle your visual and auditory senses along with your palate. From uniquely dressing oysters and salmon and more with his own home made accoutrements to the simplicity and complexity of understanding how to make sure your palate is busting with happiness he is truly the Maestro. My wife and I are foodies and have traveled quite a bit internationally and domestically and we have never experienced an evening of dining like the Raw Lab. We have had the pleasure to enjoy the experience 3 times now and each experience was wonderfully unique in its own way. Get ready for a really fun evening of delicacies for both your stomach and your mind that you will not forget. And remember to “Release the Hounds” ! Bravo Kevin and Sandy !

IF YOU ONLY READ ONE REVIEW, READ THIS ONE! This restaurant is NOT for everyone! Don’t plan on going here: after a long day on the golf course drinking beers, if you are a high-maintenance “Larry David”-type, if you aren’t adventurous, you aren’t willing to be a little social or if you haven’t been to other Charleston restaurants and aren’t sort of burned out of fried, local, tourist-trade scene. When we went, it was four (4) hours, none of the seafood was from South Carolina, and we had an amazing time. I will never sample caviar the same, the raw oysters (the best I have EVER had and from Newfoundland) came sauced, accentuated, and prepared a dozen different way, introduced to a half-dozen wines, and had the most amazing salmon I have ever had. Owner/Chef KEVIN JOSEPH provides an entertaining (think sort of a hibachi scene) and inciteful dinning experience that moves and groves to a soundtrack that brings the menu together. This is an experience and it will be a matter of time before this becomes a destination restaurant for Charleston and wins a James Beard award. Something totally different and very amazing. Very approachable, low-key relaxed experience. Highly recommend. It was the best restaurant we have been to in Charleston in years!

From the moment you arrive at The Raw Lab your experience starts and it just gets better and better…
After a very warm welcoming we were walked into the restaurant and seated at the bar that looked like nothing else.
Our Chef Kevin was so welcoming, friendly and knowledgeable taking the time to explain everything . He is a chef, a comedian and an artist all in one!
The food was not only delicious, but perfectly presented and the menu is creatively put together. His original atmosphere can’t be faulted, our experience was beyond excellent.
Your dishes all comes to the bar in unison and each dish is explained.
If you are visiting Chs or a local and want a memorable dining experience then The Raw Lab is sure to deliver! Well with the price!
