Quintessence is where philosophy meets flavor. The tasting menu defies repetition; every dish is a reinterpretation of nature’s logic. Chef Shuzo Kishida’s cooking isn’t just French—it’s elemental. The attention to temperature, texture, and timing borders on spiritual. Service is formal yet warm, creating a space where silence feels natural. A visit here changes the way you think about balance and simplicity. It’s not about luxury—it’s about purity, expressed through precision. Dining here is to witness mastery without ego.

Quintessence holds a special place in my heart. I first came here with my mom and dad back in 2014—an unforgettable experience. Revisiting now with my wife, it’s still absolutely perfect. The quality, precision, and spirit of the cuisine remain on the same exceptional level.
Here’s a photo from our first visit in 2014—a beautiful memory that continues to live on through each dish.

Visited a few months ago, but it’s easy to remember the fun time and delicious food we had there. Def the best French cuisine in Tokyo. Worth visiting at least once in your life. We were allowed to take photos in a private room.

Quintessence is the first 3 star restaurant I visited in my life and it sets the standard of how 3 star restaurant should be. The introduction of the restaurant and menu are very impressive as with their blank menu for the first time comer. All appetizers and desserts shows how good and how natural of the ingredients are. You can taste the enthusiasm from the chef on creating the menu to each customer who comes to his place. The service is excellent and the waiter is patient and knowledgeable on the dishes they served. Table arrangement is good too. No photos are allowed for the dining area so your job is just to focus on what you eat. It is worth to come every season as the menu changes. I am looking forward to come again.

Wonderful course meal with pleasant surprises. My only gripe with this place is the cheese / cream dish with the olive oil that is considered the “signature dish” is extremely overrated. It’s nothing mindblowing to be honest. But the asparagus, lamb, and fish were exceptional. Even the strawberry dessert was great. Honestly, I wouldn’t desperately try to dine here again but I’m content with how good this time was.

Great Michelin 3-star restaurant, amazing experience. All the dishes are well designed, the wine also matches the dishes very well. The baked vegetable is kind words, but tastes pretty good. The main dishes are very delicious, best steak ever. It is incrediblely hard to make a reservation here, they only have 2 timeslots per day, 5:30~ and 20:00~, but there will be some last minute cancellation which emptied table for you.

Definitely one of the best 3 star Michelin restaurant I have ever been. Very impressive creativities. Love the duck very much, amazing tender texture and still very juicy with the slow cook process.

Formal but humble. chef Shuzo Kishida masters French food with top ingredients. Difficult to get in but one will be satisfied with the experience. Highlight are the desserts especially the unique Meringue & seawater ice cream.

Years of attempts for a reservation and finally I am here.
The chef shows most creativity in the appetizers where western culinary techniques and Japanese flavors blend together perfectly. Deep fried Renkon with crab, paired by Burgundy red wine is a phenomenal combination. Signature course soft cheese, olive oil, salt and lotus just effortless grab your heart.
By no means the main courses are inferior. Lamb course is prepared to absolute perfection.
For desserts, Kyoho Creme Brulee and Fig tart surely left a great impression.
Quintessence might not be your typical refined French restaurant, but it’s creativity and high sense to flavors make them a must visit in your bucket list.
