The food at Prospect was genuinely wonderful, and the hotel itself has an incredible atmosphere. Unfortunately, the restaurant’s service was nowhere near the standard you’d expect from a place of this caliber. Our servers were disorganized, dismissive, and surprisingly rude. Entrées were served before the soup, and when I asked about the mix-up, they acted like I didn’t understand basic dining order and doubled down instead of fixing it. By the time the soup finally arrived, we were already full.

The entire table was shocked by how the staff responded. Misha, our main server, disappeared after the mistake, and another staff member—hostess or manager, not sure since she never introduced herself—set plates down with an attitude that felt almost confrontational. It was surreal to experience such poor, chaotic service in a restaurant with such great food.

Amazing flavors, completely overshadowed by some of the worst service I’ve had in Aspen.

Every dish was perfectly executed and the portion sizes were healthy without being too much. We were looking for a place to dine in Aspen that didn’t have an hour wait. Prospect was listed as closed online but we were surprised to find they were open and willing to seat us. The veal was simply delicious. The Campanelle pasta blended summer flavours with lots of depth. We added chicken to ours for extra protein.

Everything about this breakfast was next level. The service was impeccable. The food was superb. The mood, decor, lighting, and ambiance are rustic modern at its finest. Prospect’s huckleberry skillet cake may be the best pancake I’ve ever tasted. Sprinkling pine nuts within the syrup reminded me of nature from the safe enclave of a delicious comfort dish while acting as a damn fine flavor pairing with locally sourced berries. Their chicken fried steak was cooked perfectly, and so were the potatoes. My wife really enjoyed their fritatta. The service is where this place really shines, though. We felt cared for, and the positivity and concern of Prospect’s staff set an incredibly congenial tone.

Breakfast was outstanding! Highly recommend the Jerome breakfast as it comes with everything and simply gorgeous presentation. Leslie was an outstanding hostess and honestly could be the concierge! Leslie is quite the ambassador for Aspen and the Hotel Jerome as she knows the history and you can tell how much she loves her town! Check out Felix if you are looking for coffee and a pastry!

Staying at the Jerome in Aspen, and decided to have breakfast here since it was blizzard weather outside. The server for my table was Maggie who was not only beautiful, but was very attentive, and knew the menu well! She recommended the egg sandwich which was absolutely delicious! Highly recommend this restaurant.

All may seemed nice at the beginning. Our horrible thanksgiving starts with this wobbly table and impolite waiter. We are all Asians as you may see. We feel we are neglected at all time as the waiter was only here for order and check. While checking, he is trying to grab our card instead of showing how much to pay first. He didn’t tell us that the service fee is included at all until we realized at the end. The way he talks is bossy and try to order us what to do. Didn’t come to the table to ask about the food ever !!!
Ok. Next is about the food, the salmon is salty and it is even worse when you add the sauce that come with. I don’t know what kind of veggie that is used to pair with the salmon, but it is well over cooked and fibrous. The lamb loin sucks!!!!!!!!!!!! It can’t even compare with the lamb chop you get at Vons! It tastes as weird as it gets. Super smelly and sour. Not sure whether it’s the marinade or the meat is bad. The pastas we ordered taste interesting( in a bad way). The 90ish dollar steak cannot pair with its price but I have to admit it tastes normal at least! And sweet bone marrow? Octopus is tender but the flavor is…… well…. blend in flavor but salty in taste.
The manager came at the end but nothing resolved. Asked for my contact but that’s it.
It’s a really unpleasant experience!
We 6 people spend over 600. You aren’t supposed to force us to pay for your poor service!

Stayed at the Jerome and dinner with work at Prospect. Able to rent out the restaurant for the party. Fixed course dinner was phenomenal. Great service. Deep pairing of wine. The beef was superb. Every dish was so different and fresh.
