Generations later, during renovations in downtown Berkeley Springs, an old leather book was discovered, its pages filled with faint, whiskey-stained scribbles.

What a great restaurant! Came here for an anniversary dinner. Cozy dining space with a cool bar in a separate room. I got the Washington’s Rebellion Cherry Bounce to drink. It’s delicious. For dinner I had the pork chop with risotto and collards. It was a culinary triumph! My better half got the Salmon, she loved it.For desserts, the Bourbon Pecan Pie and cheesecake were both delicious. This is a great restaurant!

This place was hitting on all the right notes! Delicious fresh quality food, great friendly service and clean cozy atmosphere! I got the chicken shrimp Chipotle pesto pasta with Cajun style grilled chicken breast, and shrimp (Good size) also had fresh bell peppers and onions it was fantastic! The Stracciatella salad was delicious and exceptional, with fresh mozzarella with pesto sauce and topped with roasted tomatoes!

We stopped by here while traveling. Service was great and the restaurant was in a neat older building. We ordered the teriyaki chicken sandwich and the angus hamburger for our meals and the chocolate cake for dessert. The fries were excellent! The chicken sandwich was great and the burger was good but lacked seasoning. The chocolate cake was delicious! We recommend this restaurant.

I love Berkeley Springs and have been visiting for many years. Recently we stopped at Proof for the first time and WOW. I am actually looking forward to our next trip because I can’t wait to try more food from this place. My friend and I just popped in for a quick bite to eat while we were walking around downtown. We shared the crab pretzels and the loaded fries. Both were incredible – especially the crab pretzels!! Seriously packed with flavor, plus came out quick and hot. Our waitress was extremely attentive and quick to give any refills needed on our waters. I’m not a big alcohol drinker, but the table next to us had bourbon or whiskey (not sure) but it gets the smoke added table side. Was fun to watch!
I already told my husband next time we go together, we absolutely HAVE to come to Proof to try their dinner. If just two of their appetizers rocked, I can’t wait to try more! Great addition to downtown Berkeley Springs! You guys are killing it.

Had an amazing birthday dinner for my husband last night at Proof on Washington. Delicious old fashioned, we split massive garlic parm wings, I got the pasta- Chicken, Shrimp, Peppers, Onions, Chipotle Pesto Alfredo and her got the steak – Hand-Cut Angus, Whiskey-Cooked Onions & Mushrooms, Mashed Potato, green beans. Finished with some delicious cheesecake with cherry. Everything was cooked perfectly and the service was excellent. Thank you so much for making his night special

The restaurant is very nice and we really enjoyed our visit, especially the service from Mary, which was impeccable and made us feel very welcome. However, the tablecloth was noticeably worn with several holes, and the Parmesan risotto was unfortunately overcooked. With a bit more attention to these details, the experience could be even better.

Amazing find! My husband and I stumbled on this place and it didn’t disappoint. We sat at the bar and enjoyed the company of the employees and several other guests. The bartender made recommendations for drinks and food and we spent about 3 hours here. Definitely worth the visit! Try the smoked old fashion and the firebrand burger

The presentation was excellent! It was clear that each dish and drink were crafted with careful attention and an artistic eye. Very fitting for the intimate atmosphere of this historic building.
Do plan ahead though, especially if you are a larger group. It is a small space so it can fill up quickly. Also, parking is limited to street parking.
Service was friendly and enthusiastic.
Prices were in the $20-35 range for entrees with some less expensive sandwich options around $14-$16. Cocktails were around $10-$14 each.

Photo 1 (drink)- Washington’s Rebellion Cherry Bounce. A boozy bourbon drink with a bit of pizzazz as it is topped with a sparkling wine. 10/10 recommend.
Photo 2 (Entree)- Spring mix salad with steak, tomatoes, and pesto. So good! 10/10 recommend.
Photo 3 (drink)- Midnight Raid. Another bourbon-based drink, but on the sweeter and fruiter side. Topped with Moonshine.
Photo 4 (dessert)- Definitely save room for dessert. Even just hearing about the desserts is fun, the server brings out a whole platter and gives a presentation on what is available that day. I got an amazing piece of chocolate cake. Very rich and definitley a large portion for one person.

This place smelled good when we walked by. We made a trip back just to try it. I was not disappointed. The food was great. We got seated right away. Our waitress came right up and got us going.The crab appetizer was delicious. Both burgers were very good. They were perfectlycooked to order. The fries were ok. This is a smaller place but the food came out hot and fast. The kitchen look very clean and organized. Inwould give them 9 out of 10 stars. Definitely check them out.

Everything we ordered tasted great! Service was good too. Prices and portions were great too, even the kids menu. It’s about a block from the springs so it was really convenient to eat there first before heading over. I also really liked the menu concepts, just wished the menu was printed in a bigger font cause I could barely read it lol
