Let’s start with the brisket. Whatever wizard, sorcerer, or barbecue demigod is working the smoker back there needs to be stopped—because now I know I will never cook anything this good in my entire life. I’ve tried brisket at home. I have a Traeger, a Big Green Egg, and even a Wolf gas grill. I’ve watched YouTube videos. I’ve bought thermometers, rubs, fancy knives, even a stupid cowboy hat for “authenticity.” None of it worked. Meanwhile, this place casually drops brisket so tender and smoky it basically apologizes to your teeth for wasting their time. You don’t need a knife. You barely need gravity. It just falls apart like my pride every time I taste it.
And the half chicken? Don’t even get me started. It’s so juicy and loaded with smoky flavor that I’m convinced they brined it in unicorn tears and smoked it over wood blessed by a holy pitmaster council. One bite and I actually looked around the room to make sure I hadn’t been transported to another dimension. The meat—perfect. The skin—perfect. My ability to ever eat chicken from anywhere else again—destroyed.
Honestly, it’s rude for BBQ to be this good. It feels personal. But I’ll keep coming back, because apparently I enjoy being emotionally humbled by smoked meat.
If you love BBQ, go. If you think you can cook BBQ, go anyway—Pop’s will correct that delusion very quickly.
The staff serving was very pleasant and the location and outdoor picnic table seating by the four food trucks is very comfortable and nice.
So I asked John if I can have some brisket and the point only. Because I didn’t want the flat, that’s the leanest part of the brisket. To my surprise he said yes. I paid $12 for this amount of brisket that’s in the picture.
When I got the brisket it looked awesome very tender looking jiggles, so to speak. When I cut into it and tasted it it had a very nice taste I believe it was salt pepper and garlic powder. I also do believe that it probably was smoked with Mesquite because it had a very very strong smoke taste. But it wasn’t an over-pleasant taste, it was just a taste that tasted really good but very strong in smoke flavor.
The Bark…. I do think the bark looks good , they call it in the industry “Black Gold”. (see pictures Below) Cutting the Point in cubes can showcase your brisket more.
As you can see in the pictures, the brisket looks like the flat but it wasn’t the flat. If I was going to serve the point to a customer, I would make sure that it didn’t look like the flat. This is a way that you can really distinguish the difference between the flat and the point, most points are cut in cubes versus long slices. I will post another picture so that customer can see what I’m talking about. But this picture will not be Pop’s Southern barbecue brisket. SHHH ( it is Mine ). It will just show what i feel the shape of what the brisket should look like when you ask for the point only.
The other thing is……. if you notice the brisket it is not red but it looks brown. I believe it was pre-sliced ahead of time and kept in the warmer where the oxygen gets to it. It doesn’t ruin the taste to it or make the taste any different. It just makes the appearance look a little different. A great example would be when you get pulled pork if it’s brown it’s been pulled away ahead of time but if it’s red it’s just recently pulled for your serving. Many barbecue joints in the south will slice their brisket right in front of you and when it comes out the presentation really looks awesome. But some places have to slice ahead of time.
On to the barbecue sauce, I tasted all 3 sauces it was really good tasting it was a vinegar ketchup taste with a little cumin. Even the spicy one wasn’t too spicy it just had a very pleasant spicy taste. It did not have a powdery spicy taste like sometimes barbecue joints will put things into their sauce to make it spicy.
So I’m going to give the rating a five because it really was an excellent piece of brisket. And yes it was better then some barbecue brick and mortars places that I’ve been to in Bend Oregon and Redmond Oregon and food trucks.

We loved them so much we ordered another pound!
We all felt like the pulled pork was dry.
The amount of BBQ sauce that they give you is not enough.
Lucky we had BBQ sauce in the fridge.
The sides were okay. The roasted poblano slaw just didn’t have any flavor.
The brisket chili was flavorful but I expected a little bit bigger cup for the price.
My daughter was excited to try the corn muffins but she was really disappointed. They were dry and crumbly. It just wasn’t a pleasant experience.
We loved hitting this food truck up while we were camping in the high dessert. The pod it’s in is adorable and well-appointed with flush toilets. We also really liked the live music playing on stage while there on a busy Saturday evening.
Back to the brisket, though… It’s so damn good. The smoke on it is beautiful and the texture is perfect. I haven’t had brisket this good since I was in Texas.
The slaw and mini muffins were satisfactory, but nothing special. I LOVED the spicy beans and my daughter downed her tangy beans. VERY TASTY.
Firstly, the food truck itself was quite dirty inside and out. Nobody wants food from a dirty restaurant, right? A food truck should be treated the same.
The man running the food truck was unfriendly and made me feel like an inconvenience for just showing up.
Now, for the food. The brisket was decent, but didn’t seem super fresh— I wouldn’t be surprised if it was a day or two old. In addition, the potato salad was, unfortunately, very celery forward.
I had really hoped Pop’s would finally be a solid BBQ option in Bend, but the search continues.
I give Pop’s a 2/5 stars for the lack of cleanliness, poor customer service, and mediocre food. The expensive price of the food was not worth it for this experience.
