I would start off by emphasizing that their pickles really are the best They’re so delicious. We frequently order their sandwiches to-go using online ordering, which is perfect because we never have to wait. Their café drinks are always delicious, I love the turmeric latte with a shot of espresso. The egg salad Sammy (mary Edith) is to die for as well as their version of an Italian (hey mambo) they also have a freezer case with frozen entrées to go like lasagna and enchiladas that are uniquely amazing. Great staff. Have used them for their sandwich party platters multiple times and they always bang, people consistently asking where the sandwiches are from. I do recommend stopping in here for a sandwich and pickle. The latkes are delish too

Our first trip to Plosky’s while vacationing in Carbondale was a great one. The bagel was amazing (and very large!) and the staff was very kind. I wouldn’t hesitate to eat there again when we are in the area.

Great Deli, sandwiches were exceptional, I had the Rueben, amazing!!! Was with a big group, staff were very friendly and got our order out quickly. The owner introduced himself , which is a lovely touch.Everything made fresh, and yummy.

When I decided that I was going to be moving to Carbondale and the Central Rockies from the culinary Mecca of Northern California, I definitely wasn’t expecting a Jewish deli in my new city, and certainly not one steps away from my home. So you can imagine my pleasant surprise when I saw one through the window of my U-Haul two days ago upon my arrival. Why it took me two days to get here is a question I’ll continue to ask myself because Plosky’s delivers and more! From the friendly staff to the comfy atmosphere to the AMAZING culinary treats, I can safely say I’ve never had a deli quite like this anywhere I’ve lived, let alone in the middle of the mountains. While I haven’t tried their bagels yet, they look awesome in the display case and I’m sure I’ll be taking a half dozen home with me next time. Whether you’re a local like me or dropping by on your way to Aspen/Snowmass, you’re doing yourself a disservice if you don’t stop by Plosky’s for a bite to eat. Trust me, you won’t be disappointed!

The best! My husband and I have always been a fan of Plosky’s since it has opened. We used them twice to cater during our Wedding weekend – for getting ready and then also our Post Wedding Brunch that we set up at Marble Distillery. Great bagels, great spreads, great coffee -all of it! Thank you!

Bagels are great and my son says he loves their oat milk. Great sandwiches with sprouts, bacon, avo, etc. and vegan and gluten free options. Super nice staff, plenty of spill over seating indoors and outdoors.

Wow was this place delicious! We both had the Mambo. Everything was fresh and the sun roll was heavenly. The hot pepper relish was really tasty as well and added nice spice- defiantly not hot though. The sun was huge and we only ate half so now we get it for leftovers. My partner had the egg salad and wolfed it down. I could’ve eaten multiple bags of the pickle potato chips.

Came in here about 1pm after biking 12 miles from Glenwood Springs.
Place was packed! Just 4 small tables inside and a handful more outside.
Expensive sandwiches for sure, but unique flavors you can’t find at a normal deli.
All the employees were working hard and friendly.

We literally just left and it was the most disappointing experience my husband and I have ever had here. The front-facing staff were very nice (as always), however I could audibly hear the chef complaining about my order with very simple modifications (cut in half, wrapped separately because I was sharing the sandwich with my mother who is visiting town). The manager or owner was conversing with the chef about his complaining stating that modifications have to be made. The sandwich came out wrapped as a whole, and the other modifications weren’t done to the sandwich. If you’re expecting people to pay about $20 dollars per sandwich, you’d expect to have your modifications delivered how you ordered your sandwich. My husband come in often, and we were really excited to show here. Nonetheless, this was a very disappointing experience, especially when we tip 20%+ on takeout. This visit left a very bad taste about the kitchen operations. I would have rather discuss it in person, but since we need to go home and re-make our sandwiches, we left in a hurry.
