
Pioneer Kitchen is founded on the bounty of our region and farm-sourced ingredients, as well as taking inspiration from West Coast culinary traditions of sustainability, seasonality, and hyper-local ingredients. Together, these foundations make up what we like to call the “New Rocky Mountain Cuisine”, rooted in freshness and innovation. The cuisine – sometimes rustic and rugged like the terrain, sometimes refined and elegant – blazes the trail for a new expression of what the region has to offer in terms of natural resources and culinary expression. Menu items include Roasted Beet & Melon Salad, Burnt Carrots & Parsnip, Smoked Trout Dip, Charred Wagyu Shortrib, Mushroom Bolognese, and Cedar Planked Ora King Salmon, among many others.
