On a hot Sunday night, my hunger wanted something impactful, yet cheap. I’ve had my eyes on Pinky’s for awhile, so the stars aligned for my first visit.
Pondering upon what to order, I decided on good ol’ tacos. Unfortunately, they did not have lengua or birria de chivo, so I went with a trio taco plate of al pastor, birria de res & cabeza-
Pinky’s did not skimp on the meat. Accompanied by 4 sauces, slices of lime & pickled carrots/radishes, the tacos were hefty. Topped with onions & cilantro, I relished eating these tacos, my favorite being the oh so tender, oh so succulent cabeza.
Quesabirria taco-
While chowing down on my trio of tacos on the hood of my car, the staff hollered at me to get my attention. Fortuitously, I was given their most popular item, the quesabirria taco, on the house. My picture/video taking probably had a part in that. Piping hot, the quesabirria taco was cheesy & a wonder to the senses. Again, a liberal amount of juicy birria de res, topped with onions & cilantro, encompassed by salty cheese. I can see why this is Pinky’s bestseller. Nonetheless, I still give the nod to the cabeza taco as my favorite.
Service was excellent. This family-owned food truck had a friendly & hospitable young woman taking orders. I lucked out and was the only customer at the time, a couple people arriving after me. Pinky’s Tacos is parked in front of the liquor store directly behind Planet Fitness.
Stuffing my face with delicious tacos, the hood of my car as the dining table, I could nary think of a finer meal I’ve had, at the time. At $2.21 (current pricing), Pinky’s Tacos’ bona fides in Mexican street cuisine is unquestionable. Being so close to me, I’m looking forward to coming back & exploring the rest of the menu. Whatever I choose, I know I’ll be greeted by a kind family, cheap eats, and a happy belly.
