We have been wanting to visit for awhile and we finally got the time to come today. We waited in line for about 45 minutes (Saturday at 2:30) The bar is separate from the line for meat so we got a drink first. A beer and two margaritas was about 30 dollars minus the tip.

For food we got the man, bear, pig sandwich and the pulled pork sandwich topped with coleslaw, the duck jambalaya, potato salad, and mack and cheese with brisket. Everything was super delicious. They have two sauces that we saw.. the original and the sweet.. which were both tasty. The bread with the sandwiches is different from what you get with the bulk meat and it was just the right amount of sweet and savory to go with the toppings. After all this deliciousness we are stuffed full! Will definitely be back. Best bbq in town we have had so far and was definitely worth the wait.

BLUF: We spent under $100 including tip for 3 adults. Most meats are running about $35 per pound now — so this is premium BBQ pricing. Worth it if you know what you’re walking into.

Went on February 14, 2026. Got there right at 3:00 PM and still waited about an hour in line. It’s clearly popular, especially on a holiday.

Atmosphere was great — busy, energetic, but still comfortable. Staff kept things moving and the place had a good vibe.

By the time we left, they had already run out of ribs, so if ribs are your priority, get there early. Don’t assume they’ll still have them mid-afternoon.

Food quality was solid — good smoke, good bark, flavorful sides (mac and cheese, jambalaya, sliced bread). Portions were fair.

Bottom line: strong BBQ and great atmosphere, just go early and understand you’re paying top-tier per-pound prices in today’s market.

Pinkerton’s is an excellent barbecue restaurant located downtown San Antonio. The food is high quality, my favorite is the brisket. We waited about 45 on a Sunday, not bad at all.

After a hour wait made it in. Servers were friendly and helpful it all looked amazing. After getting my food and paying $280 without the tip $320. The pork ribs were the better part of it all but not the best. The beef ribs were smoked but not much flavor. The pulled pork was a little mushy. The sides were below average. After all my anticipation not to impressed. Should have spent it all on ribs. Sorry i call it like i see it!!@@!!

Be ready to wait in line but the wait is worth it. The meats are excellent. We had the Texas beans, bacon mac n cheese, coleslaw and potato salad. All were great except the potato salad was a little bland. Otherwise great place to eat BBQ

In an era wherein too many historically good businesses are dropping quality and living off of what used to be, Pinkerton’s Barbecue is holding to the standards that made them great, delivering the best beef, pork, & sides anywhere in an atmosphere associated with the Texas Barbecue scene of lore.

The beef rib is the best I’ve ever had and all the standards are up snuff right along side it. We had jalapeño rice, jambalaya, barbecue baked beans, pulled pork, sausage, and brisket to round out our tray. All the sweet tea you can drink and you won’t leave hungry.

Gotta be honest… overrated. I seriously think HEB’s BBQ might be better. The brisket was like a slice of pot roast. No crust or rind or burnt end char. A lot of fat too and it was wasn’t rendered like others I’ve had. And pot roast kind of flavor. The pork was greasy too. I bought about 8 ounces of meat and about half was chunks of fat. The best part of the meal was the potato salad. That was 5 stars for me. The slaw was not tangy as advertised and was dry. I hate to say all this, but it wasn’t that great. I’ve had a lot of Texas BBQ and this was basic to me. Kind of disappointing for the price too. Not even top 10 of all the ones I’ve had. Sorry fans. Maybe the other stuff is good. The Mac n Cheese looked pretty solid. Bread was good.

My god. If you consider yourself a fan of meat, this is a pilgrimage point.

The set-up is orderly – despite the popularity, this is NOT chaotic. You wait in line, and order items in turn.

Yes, they will sell out of the ribs, so just go early. Like, there were only 20 people waiting outside at opening. Very reasonable. By noon, on a random Wednesday, the line outside was gigantic, densely packed to the curb – well over 100 folks outside. It’s worth the wait, but maybe just take an early lunch…

Stuff:
* The small sides are quite sufficient.
* 1 beef rib is more than enough for the whole meal’s protein. So rich in flavor.
* They have to-go bags in the dining area once you realize your soul was larger than your stomach.
* Sauces are at the inside tables, but you really don’t need them.
* The online ordering function misses the point if you’re a small group (but it’s great for bulk orders). Just do the standard process.
* It’s gonna be expensive. If you want cheap slop, there are other options.

I was excited to be able to get brisket even at our late arrival time around 8pm! Brisket was juicy and tender, should’ve asked for double pickles, both bbq sauces were equally delish, potato salad was excellent (mustardy), slaw and mac n cheese were standard fare. Both banana pudding and bread pudding were delish as well. Waited quite a while in line, but worth it.

Wow! Phenomenal BBQ. This is where everyone said to go and they were right! I could tell before I finished my first bite of the pork rib that it was going to be great. Best ribs I’ve ever had. Beef brisket also phenomenal. Loved the Mac and cheese as well as beans. Cole slaw was just okay.
