I came back to the restaurant today to try another pho on the menu, this one is with the rare filet mignon, the taste is still good and I also request more green onions to be added, just like how we normally have it in Hanoi. The only problem is with the rare filet mignon, the temperature of the broth dropped significantly while I prefer it to be boiling hot. I hope they can improve this.
As a Hanoi born and raised, when I heard that this restaurant claimed that the flavor of their pho is Hanoi-style, obviously I need to check it out.
I ordered the beef shank pho with fresh noodles and a poached egg yolk on the side (with the egg white being removed, that’s how we normally have it in Hanoi).
The flavor of the broth is slightly saltier than what we normally have in Hanoi, but flavorful and umami intense. You can feel the fragrance of fish sauce being used in the broth. The temperature of the broth is right on point as well because in Hanoi, we don’t like our pho to be served cold or lukewarm, it needs to be boiling hot and steamy. The meat is fresh and flavorful without being gamey or beefy in an unpleasant way. The noodles are soft and chewy with a pleasant mouthfeel.
A few things that I feel they could improve is: the amount of spring onion (we tend to have more spring onion on top of our pho, the amount I saw today is a little bit sparse), the sliced beef shank should be medium-rare when served and cooked by the residual heat of the broth, not well done.
Overall, I am satisfied and will come back next time.
The broth here is perfect; it’s beef-forward and balanced, not loaded with sugar or salt. It tastes authentic and healthy. Make sure you order the flat fresh noodles—the texture is much smoother and more tender than the usual dry noodles.
My picky toddler, who usually refuses beef, ate three slices of brisket here. That is a true testament to the quality of their meat! Great spot to hit up after Happy Hollow.
The broth is beautifully clear yet deeply flavorful, with a natural bone sweetness and a fragrant aroma that hits you the moment the bowl arrives. The meat is sliced just right, tender, juicy, and never chewy.
What truly sets this place apart are the homemade chili sauce and pickled garlic in vinegar. Even the bean sprouts are meticulously prepared, with roots and heads removed, small detail, big foodie points.
The space is spacious, clean, and modern, making it a comfortable spot for both casual meals and repeat visits. I’ve eaten here many times, and the quality has been consistently excellent. If you’re in San Jose and craving authentic, well executed Vietnamese pho, Pho Dang is absolutely worth a stop.
Location is convenient since it’s located right in front of Walmart, if you need to get groceries done as well.
Now, 3 months later, I’m disappointed. They wouldn’t be able to keep up. We ordered 2 orders for to-go. When we got home, we realized it’s nothing like they served us at the restaurant. The noodles portion was so little (not even enough for our 6 years old girl). The meat portion was not enough either. It’s quite a rip off for $20/bowl.
