French Restaurant is in the lobby of the Mollie , nice vibe, service was great from the hostess to the waitress and the manager. I spend about a month a year in Paris and know French food. The food was very good. The Bibb lettuce and the escargot and baguette just like in Paris. The Steak au poivre was good my only suggestion here is that the steak had way too many whole peppers but cooked perfectly, the fries that came with it could of been more French authentic, The French onion soup my wife had was excellent.

My wife and I enjoyed our dining experience at Petit Trois very much last week. The reception was friendly and the had no problem taking our wet coats and hanging them up for us with a smile. We sat at a comfortable 2 top in the middle of the room, but the spacing was enough that we could have a private conversation. Penny our server was very professional and attentive. The Snowy night pointed us to some traditional French dishes including crab souffle, lighter but tastier version a crab cake. We then shared the wonderful steak aux poivre, local beef filet with a pungent cognac pepper sauce(favorite). Along the way we enjoyed Derek-sommelier’s informed conversation and smart wine choices. Look forward to going back!

We had an absolutely great time at Petit Trois from start to finish. We walked in at 7:15 on a Monday night and were lucky to get two seats at the bar as the dining room was fully booked. It turned out that our perch allowed us to observe the staff working together, which was a pleasure. They were professional and helped each other succeed and maintain a high level of service, which in turn made for a very hospitable atmosphere. The team members we chatted with, including the Sommelier, Derek, were warm and knowledgable, making recommendations and answering questions with patience and enthusiasm. Our dinner was delicious and the bartender Blair helped us course out a variety of dishes. The wine list, ingeniously organized by grape variety, was approachable and exciting. Even the details in Petit Trois’s restaurant design and service materials which were selected to work in the small space were beautifully thought out and executed. We’re already looking forward to our next visit!

Petit Trois is a brand new spot as of December 2025 – becoming the new restaurant inside the mollie. So when you’re looking at reviews, note that a lot of the comments were for the previous hotel restaurant.
Petit trois is a phenomenal new addition to aspen. Service is great. Food is excellent. Vibe is super cozy and lovely. It’s a true French bistro with great classics. Excellent French onion soup, great fish, great pasta. Team was great, excellent wine list too.

Food was good – a bit pricey for what you get, but it is Aspen. Service was awful – the place was dead (on a Saturday night) and we barely saw our server.
My wife had the lobster spaghetti and I had the steak frites. Both were good, although like I mentioned what you pay for these dishes they were OK – I liked the lobster spaghetti better personally, and I am usually a steak person! The steak was cooked properly, and the fries were decent.
