Where the meal truly found its stride was in the accompaniments: side dishes that were well-balanced and thoughtfully crafted, and a dessert that provided a confident, satisfying finish. However, the overall value feels slightly misaligned; given the uneven quality, the prices seem a touch ambitious.
Pendergast has clear potential, with a menu that hints at greatness. With a bit more attention to consistency and detail, it could easily become one of the city’s must-visit spots for barbecue enthusiasts.
Service is very slow and basic – absolutely not in line with the food quality. Ambience is irrelevant, no particular personality or charm.
Would come back for the food.
Service and atmosphere: this is where i’m just a bit disappointed. With a menu like this, I wish there was just a bit more of an American warmth and feel in the place. Not a single staff member was American and the restaurant itself just feels plain and uninspired. No American flags? No country music? No big warm welcome or attentive staff? Say what you want about Americans but it’s moments like these where I would love their hospitality and friendliness!
Whoever owns this place has done a great job with the food, but why not lean into the American theme a bit more?
At the very least train your staff to ‘pretend’ they are nice, cause the typical Amsterdam attitude doesn’t rhyme with this type of food – or these prices for that matter.
The brisket on the other hand, can be variable in quality. It tends to be on the drier side, and the bark is not so nicely developed as it needs to be. They also, for some reason, cut the brisket much thicker than is usual, leading to a somewhat chunky experience that is compounded by the dryness of the brisket. It is nicely flavored, though. For me, it is a 3/5 for the brisket.
The ribs are so good that I cannot in good conscience give this place less than 5 stars. Very nice, and will definitely continue coming here.
