Ok before you read this review, make sure you know this review is coming from a vegetarian! Yes I am a vegetarian reviewing a barbecue place. Why am I putting this review in? Well because sometimes you have meat loving friends who want to eat barbecue and you don’t want to miss out on socialization. As well I figure if the place can make sides good then hopefully that means their barbecue is good right?
Located behind Batch Craft Beer and Kolaches, this barbecue trailer is super fun place to bring large groups/family as it has large outdoor seating area with picnic tables and a turf area for the kids to run around and play in. There were other trailers in the back as well, but we focused on Parish which is BBQ with a Cajun twist.
We came right when they opened on Saturday at 11 am and was pleasantly surprised there wasn’t a long wait. However will say by the time we ordered and got our food the popular items like pulled duck and rolls were sold out by 1 pm.
We a vegetarian almost all the sides were vegetarian. I really enjoyed the pimento Mac and cheese (as did my whole group and was unanimous the favorite side out of all the sides). It’s slightly sweeter than regular Mac and cheese because of the peppers. I also liked the creole tomato salad as it was nice and refreshing. The potato salad was nothing to write home about. However you must get the fried pistolette rolls!! They were DELICIOUS, buttery but not too heavy and honestly weren’t overly fried.
Parking wise they have shared parking but plenty of street parking if the parking lot is full.

Incredible bbq! I went their opening weekend and this weekend and had very consistent experiences both times. Super friendly staff who are genuinely happy to be there feeding and chatting up customers. Huge fan of the brisket and pimento mac n cheese (and I’m not usually a man n cheese fan but this one is out of this world). The mustard based bbq sauce needs to be bottled and sold!!

Had to come and give them their flowers because they absolutely killed every dish, the duck and ribs were perfect & couldn’t get enough of the sides. Really loved their potato salad, may be the best I’ve ever had. Really cool hangout area, kid and dog friendly with also being able to snag a coffee from batch. Perfect Sunday spot. What also stood out to me was how incredible the customer service was, great convo and suggestions & took his time with having us try out some different stuff. 10/10 will be back!

Things happen for a reason. I went to the Egyptian BBQ truck and it was rather late and the Lamb Chops were sold out. However, earlier in the day, someone had highly recommended Parish Cajun BBQ that is literally a couple of blocks away so I headed there for my lite afternoon snack and let me tell you, I had another culinary revelation beyond measure.
I ordered Beef Brisket, Pork Spareribs, and Cajun Beef Link with the Acadiana Potato Salad on the side.
The brisket is bathed in Tabasco and then finished with Cajun seasonings. I failed to order moist brisket but the cuts that I got were not dry and very flavorful
The Pork Spare Ribs also get their Tabasco bath and Cajun spices then finished with a light Steen’s cane syrup glaze. Steen’s cane syrup is a product of Louisiana.
The Beef Links are house made with the Cajun Flair and I love the snap on the casing.
The Acadiana Potato Salad really got my attention. I was told that the potatoes are crab boil seasoned water and then Duke’s Mayonnaise, Creole mustard, eggs, olives and green onions are added for a perfect marriage of flavors.
I am definitely coming back to check out the Pulled Duck Breast and the Crawfish Cornbread Dressing

I’ve been reading about how great Parish BBQ is on Eater and the Infatuation, and I finally found myself on the East side after leaving the airport, coming home from s long International trip. I was really craving some BBQ and Parish delivered. There were two of us and we shared 1/2lb each of brisket, ribs, turkey and the ham. I had heard people raving about the ham. It was excellent and tasty, but the brisket was still the star. Just stunning with nice line of fat down the middle. The ribs were tender and nicely smoked, and the Turkey was tender. The owner came by to chat, and explained a bit about technique and was appreciative of our business. Also had the fantastic fried roll and honey sauce, along with creamy pimento Mac and cheese that had a little crunch on top, and the Vinegar coleslaw – nice kick. We took about half the meats home with us, as I intentionally ordered extra. This truck is in the grove for Batch, and they sold the craft beer. Separate review for them. Great kolaches!

I had some really stellar BBQ here the other day! I had brisket, pork ribs, the pepper jack sausage link, potato salad, and the pistoletta (I hope I spelled that right) roll with the tobasco honey butter. I really enjoyed all of these but, for me, the ribs were the best! I really wanted to try the duck but it was sold out – too bad but that says to me that it’s fresh! I’ll try again.
It’s a food truck around the back of Batch so don’t look for a brick and mortar location! There was plenty of parking and seating.
The guy behind the counter was pretty cool, straightforward, and willing to give you recommendations. My friends and I can’t recommend Parish highly enough!

Cajun glazed ham for Xmas was amazing! And the times we went before for the daily bbq were just as good! Ribs are out of this world tender. Mac and cheese with some cracklins on tops sealed the deal. Don’t forget the crawfish dressing.

Great BBQ joint but the sides stole the show! The mac was 10/10 killer with creamy pimento sauce and crunchy topping. Loved the crawfish cornbread pudding. Sandwich was good – ended up pulling off the slaw and brisket and eating them with a fork because they went beautifully together. A playful space behind batch brewery – plenty of long picnic tables and space for kiddos to run around.

Visited Parish Barbecue on Saturday and got in line right at 12:00. The line was long—it wrapped past a kids’ play area and over to the a bocce ball pit. We finally made it to the front at 1:45. We estimated each order was taking 3-4 minutes given the number of people in line. By then they were already out of rolls, duck, sausage, boudin, and the cornbread dressing, which was pretty disappointing as we hoped to get one of everything to taste test.
That said, what we did get was solid. The pimento mac and cheese was absolutely amazing. The ribs were also a standout, super tender. The brisket had a sweeter flavor profile than your usual Texas BBQ, which might not be for everyone.
There’s plenty of outdoor seating at picnic tables and we had no trouble finding parking. Just make sure to show up early if you want the full menu experience!

Layers of smoke, fat, and flavor Parish BBQ is a masterclass in Central Texas barbecue. Brisket that melts, ribs with the perfect pull, and sides hold their own. The brisket and ribs are next level. Smoky, juicy, and absolutely on par with the best in town.
This is a great spot to grab a beer and enjoy with friends and family. Keep in mind that they do sell out quickly, so make sure to show up early!
