I am glad to see Guatemala enter the BBQ community/eternal war. I am from the Delta region so I prefer Memphis BBQ but I can appreciate most (inferior) other BBQ styles.
Service was great, as expected in Cayala. The nachos were fine, tasted like what we have back home. But the brisket was very overcooked – a Southern sin. Portions were fairly small on the 1/3 pound plate. The “rib” I got with it was also overcooked, nothing of that classic juiciness. Had to slather it in their overly sweet version of a vinegar based sauce. They also have an overly sweet mustard sauce. For me, a Memphis guy, to tell you a sauce is too sweet… you need to believe me.
The garlic green beans were okay, but the sweet and spicy corn lacked fat. They needed butter to bring the flavors together.
Anyways, I sound negative. They are kind here, and if you want to hear country music and drink a Dr Pepper, this is your place.
I hope the owners will take this into account; I look forward to visiting again to see if that is the case.
First off, the service was good and the Pappys picnic lager is a legitimate great light beer.
I had the green beans and coleslaw, both were tasty.
As for the bbq. I had brisket and ribs. Both were overcooked and dry. The rub on both was good, I only tried the Nini sauce because mustard belongs on corny dogs – not bbq. The sauce was sweet and lacked any spice but wasn’t bad.
Overall, for a joint that calls themselves Texas, I’ll say it’s as close as I’ve had this far from home. I’d eat here again.
