Chef Felix Rinco (Papi) immigrated to the United States from Mexico in 1980. He immediately started working at Maya Restaurant in Santa Maria and remained there as their main chef for 11 years. In 1991, he took over Taco Express in Paso Robles and named it Papi’s after his own nickname. His cuisine sytle comes from the state of Zacatecas in Mexico. Located in the northwestern part of the central Mexican plateau, Zacatecas has been culturally significant since pre-Hispanic time, when it was one of the few holdouts not conquered by the Aztecs. very casual place with outside tables (+ small inside area). Btw two people had two fish tacos and two Birria tacos. Fish was tender, Birria tender and great flavors. We both thought that they were the best tacos we’ve had in quite some time. (Saw other patrons with massive burritos, for those who want a larger amount of food). Friendly and helpful wait staff. Close to freeway off ramp and so easy to get to. We will look to come back.
