Their crispy shells are filled with a sweet ricotta mixture that’s delicately flavored (with a hint of amaretto), balancing richness and sweetness without feeling too heavy after a big meal. 
In addition to the cannoli, the menu also features tiramisu, New York-style cheesecake, chocolate mousse, and a few other fun selections like Italian rainbow cake — so dessert lovers have plenty to choose from and can mix and match.

Paolo’s tucked along Amity Road means it’s super convenient if you’re coming from New Haven without having to deal with the downtown traffic or parking hassle. There’s ample parking right in the lot — usually easy to snag a spot — which is such a simple pleasure yet so underrated for dinner spots. 
The dining room itself feels cozy but not cramped, with a vibe that’s relaxed yet well-dressed enough for date night or a casual dinner with friends.
Sure, busier nights can get pretty lively — the place does draw its regulars — but that’s part of the charm. You’ll hear laughter at neighboring tables and see folks lingering over a second glass of wine.
