Cute place. Just wanted a little snack so decided to stop by to work (we’re opening Wings Over Fate behind Pablo’s). Chips and salsa are tasty, shrimp cocktail is a little soupy, but flavor is good! Margarita swirl was delicious.
Will be back to try all the other food other options!

Plenty of parking. Family friendly pricing, alcohol drinks, definite community feel without the ‘designer stager’ overkill.
Portions were spot on and tasty. I was impressed with ingredients. Took a bit of time, but it looked like mom made it… Home Cooked Meal, and that is a good thing. Tired of ‘Chilis’ style food and ambiance… nice change of pace.

Oh my, my!! When you come to Fate, Texas you have got to eat at Pablo’s! The food was out of this world delicious. Our service was fantastic! We never waited for anything. Our server kept our delicious sweet tea, chips & salsa full. We started with the brisket queso. I forgot to snap a picture but trust me when I say, you don’t want to skip this. It is spectacular! Their chips and salsa are wonderful with a perfect amount of heat, (for me.) I had their Baja tacos (I chose shrimp) with rice and refried beans. Absolutely delicious. There were a lot of shrimp in my tacos which made me very happy. Their rice looks like its just going to be plain white rice but then you take a bite and pow, that flavor just fills your mouth. I tried a bite of the charro beans that my husband ordered and they were delicious as well. I could have eaten a bucket of those. Im really serious when I say that you don’t want to miss an opportunity to eat here. Their prices are very reasonable and their portions are a great size.

We really enjoy this place. It has great food and the staff are very friendly. My wife loved the quail and the beef enchilada was great! The place is beautiful with good seating inside and out. It is located right in downtown fate. You can also park behind the building if the street is full.

We ordered the brisket enchiladas and loved them with the chipotle wine sauce. We substituted the black beans for the ranchero beans. The beans had a great flavor. The chips and salsa were delicious.

Beautiful atmosphere and good service, but the food didn’t quite meet expectations. The queso tasted store-bought, and the fajitas were just okay. The only good thing for us was the fajita beef.

Quality is declining. Most talented managers keep leaving. Even Pablo (whom the original place’s name “Pablos” is named after) is gone. Another manager Tyler an experienced manager and was awesome and is also gone. Current manager is young and not as polished or experienced. Trickle down effect, there is a noticeable difference, yet prices are slightly higher than previous year. Now they have competition in town with Sauce & Vine. It pays to keep ur best people and treat them really good because it truly matters to the customers. Feels like the family vibe, warm atmosphere, and spark is not there.

Had an amazing experience at Pablo’s Mexican Cuisine! The food was fresh and full of flavor, and the atmosphere was great.
Ruth, our waitress, was SUPERB – friendly, attentive, and made sure everything was perfect. Her service truly made our visit special.
We’ll definitely be back, and will ask for Ruth.
P.S. – Be real careful with the OTR drink – Whew!!!!!
