The Aslatian fare was intriguing so we came in to try some wine and light apps. Such a wonderful, sublime experience. The wines by glass are superb, we tried 4 different varieties.
We had the bretzal and soup de jour (mushroom). Really top shelf for both. They offered an amuse bouche that was delightful and finished with a small chocolate blueberry bite.
All were so good, we almost canceled our dinner reservations. Easily top tier in Ashland.
Also should mention that Nous is a place where my husband doesn’t mind the navigation, because it bypasses all the hectic chaos of the plaza (an area where he frequently loses patience).

Through their identity comes a fresh and fantastic dining experience. The colors of the walls, tables, and lamps are various pastels of green, pink and blue. This is a charming homage to the characteristic German-style buildings of the region that boast these colors (google image search “colorful homes Alsace”).
This sets the scene nicely for what’s to follow: delicious food and drink. We went with the leek starter and, of course, the pretzel. The leeks were a complex adventure, softened and seasoned in oil and sprinkled with other textured elements that made each bite a new experience. The pretzel was light and airy, accompanied by chicken liver pâté, aerated cheese, and a robust mustard. Totally new flavors in this town.
Our entrees were a delight as well. The schnitzel was so well done. The crispy fried exterior collided elegantly with the mushroom gravy sauce to give you both crispiness and creaminess in a single bite. The accompanying potatoes were also perfectly cooked and somehow fluffy all the way to the center. Accidentally spilling a little gravy in that direction of the plate wasn’t a bad idea.
Finally, I’ll mention the pea spätzle. The server aptly called it their “Dr. Seuss dish,” and for good reason. Each element was goofy and off-the-wall, but somehow worked excellently. The small noodle flakes were so intensely seasoned with herbs that it almost felt like they could list perfume as an ingredient. Their strong flavors were interspersed with caramelized onions, intensely pickled cauliflower, carrots, peas, and a light fluffy cheese to give your palate some reprieve. If you’re an adventurous eater, you must choose this one. It may be one of the more interesting dishes I’ve tried.
If you’re looking for a unique, elevated, yet comfortable dining experience, I highly recommend trying this spot.

I came back to double check my work, and everything checks out! This is a unique, fun, stylish, and relaxing place to have an engaging meal.
This time around, the menu was a whole new seasonal adventure. The spatzle was reworked as an autumn dish. There was a new hearty pot roast, and a whey poached trout. Every item was made with care, and the strength of each dish was the push-and-pull between strong flavors, mixed with milder items to provide a little reprieve. For example, while the accompanying brussel sprouts and squash brought a strength of flavor/texture, the trout was a simple yet delicious delight.
The seasonal changes to the menu was a power move, because it felt like Christmas Eve, a whole new set of gifts under the tree to fantasize about. The spirit of exploration alone got me excited to book my next reservation. Overall, come and enjoy what Ashland boasts as the only dedicated Alsatian restaurant on the west coast.
Night! (Sundays at 4:30) they have a ton of fun games and you can enjoy a night of food too. We started with pretzels, the cheese dip has a nice zing of sharp cheese and air throughout. Then the kids had Mac and cheese that the chef came out and told us he made extra cheesy for them! I enjoyed the salmon with roe and celeriac purée. I wasn’t sure about celeriac but I loved it! I also ordered the chicken thigh which was delicious and came with beans and fennel! I had lots of leftovers to eat at my air b and b. We shared a dessert which was a spicy cake with coconut cream (no eggs or gluten or dairy!) I would eat one everyday! Crispy crust and soft middle. Night of Fall. I love how they serve regular or sparkling water. The staff all made a point to check on us throughout the night and refill all of our waters. The kids enjoyed another pretzel too! It’s so peaceful inside with its green and pink color pallet. Julie is an artist and hosts regular art shows. We enjoyed looking at them before leaving! If you’re looking for a beautiful environment to enjoy an amazing meal, I highly recommend Nous.
Nous has a refined yet unpretentious setting. The service is unmatched. We had the endive salad, the schnitzel, the crown of pigeon, the choucroute and the bavette steak frites. Everything arrived fresh and delicious!
The house-made sausage was mouthwatering.
I’m from out of town but I cannot wait to dine here again!

From the moment we walked in, the experience was amazing. Julie, one of the owners, served us and was absolutely delightful. Chef Charlie came out to the floor and spent some time with us, which made the evening feel extra special. We also got to meet Molly—so nice to see all the owners present and so involved. It truly feels like one big happy family running the place.
The service was impeccable, and the food was out of this world. We had two incredible cocktails to start the night off right. And although my wife rarely eats dessert, we couldn’t resist the soufflé—and we’re so glad we did it. It was absolutely perfect.
Five stars all the way. Nous is a gem.
