You don’t want to miss this Texas Monthly Top 50 BBQ spot in Decatur, Texas off 287 before you get to 380. The brisket is definitely going to be one of the best you’ve had! Brisket Boudin is one of their specialty sausages and you are going to want to bring some of this home. Be sure to pitstop here, if you’re driving down 287. VETERAN OWNED business and they are almost finished with their restaurant that’s going up right behind where their food truck is right now. Grab a free Lone Star Beer. North_texas_smoke

Had an absolute blast yesterday at North Texas Smoke BBQ (2601 US-287, Decatur, TX 76234)—right in our DFW backyard! We rolled in a little too close to closing time (lesson learned: get there early for those ribs—they sold out fast!), but man, the food we grabbed was straight-up incredible. Tender, smoky perfection that hit all the right spots.
Big props to the Junior Pitmaster Brody—what an awesome young guy keeping the family tradition alive. Snapped this fun pic with him to remember the vibe!
If you’re anywhere near the DFW area, do yourself a favor and swing by. You won’t regret it.

We checked out North Texas Smoke Barbecue in Decatur after seeing the owner’s YouTube interview and were blown away! The brisket, ribs, and pork belly were all delicious, and the sauce was spot on. We missed the pork belly fried rice this time, but it just gives us a reason to come back. Definitely a go-to spot for great barbecue in North Texas!

We sought out a great Texas BBQ place for our trip across the state, worthy of stopping and getting off the road for and this place didn’t disappoint! It was windy and chilly outside, so I was surprised by the picnic-table only approach but it was 100% worth it. Literally all the meat AND all the sides we ordered were amazing. Review: North Texas Smoke BBQ – Decatur’s Highway 287 Treasure

North Texas Smoke BBQ, a proud recipient of the prestigious Texas Monthly Top 50 BBQ award, operates out of a highly-praised food truck just off Highway 287 in Decatur. This is more than just a quick stop—it’s a destination. With ample outdoor seating and parking, the environment is welcoming, backed by a very friendly staff who are clearly passionate about their craft and well-connected in the BBQ community. Every item served is homemade, and the quality shines through in this exceptional spread.

The Smoked Meats
The meat selection at North Texas Smoke is executed with high-level pit mastery:

• Brisket: The brisket delivered on moisture and flavor. It was very moist and juicy, boasting a good smoke ring and a bark that was commendably good and firm. The only critique was that the bark was a little salty for my personal taste, slightly overwhelming the beef’s natural flavor.

• Spare Ribs: These ribs were juicy and deeply flavorful. They were mostly tender, retaining the desired bite that indicates proper doneness—although they did not fall off the bone. They were slightly tough near the edges, but the majority of the rib was excellent.

• Jalapeño & Cheddar Sausage: A solid link with a great foundation. The casing had a nice snap, which is a sign of a perfectly cooked sausage. While the flavor was good, the grind was not as loose as it should be for that classic Texas texture, making it feel a little denser than expected.

• Boudin Sausage: This was a clear standout and highly innovative. It featured an excellent mixture of smoked brisket and fragrant jasmine rice, creating a beautiful balance of smoke and starch. The link offered nice texture and flavors, encased in a great casing that held everything together beautifully.

The Bold and Homemade Sides
North Texas Smoke goes above and beyond with sides that are both creative and perfectly executed:

• Pork Belly Fried Rice: This is a fantastic, spicy creation. The base of basmati rice was delicious and provided all the right textures. It had a nice spicy kick and was generously mixed with tender pork belly, corn, peas, egg, and carrots. A highly memorable side dish.

• Street Corn: Absolutely awesome. The fresh corn was incredibly creamy, coated in a delightful spice combination of savory cotija cheese and bright bursts of jalapeño bits. It’s the perfect blend of creamy, salty, and spicy heat.

• Loaded Potato Salad: Served cold, this traditional side was done perfectly. It was properly “loaded” with generous amounts of cheddar cheese, crisp bacon, sharp red onion, and fresh chives. A classic side that provided a cool, refreshing counterpoint to the hot smoke.

Final Thoughts

North Texas Smoke BBQ deserves all the accolades. The meat program is strong, anchored by a moist brisket and flavorful spare ribs, while the Boudin Sausage stands out as a unique signature item. However, the true difference-maker is the quality and creativity of the homemade sides. This is a top-tier Texas BBQ experience delivered with authenticity and warmth.

Not huge on bbq? Not a problem. Do yourself a favor and try their double smasher, you will not regret it. I’ve gotten this bad boy about every way it can come and it never disappoints. The flavor of the meat hits the spot every.single.time.
Please note: This is not to say the bbq is not also fire, because it is. A couple more of my favorites from this joint include the brisket loaded spud, the frito pie when it’s cold, and my absolute runner up to the burger, the loaded potato salad. Year round NTS brings the heat, you’ve made a lifer out of this one, much love!

Great place, great food, can’t say enough good things about them. We weren’t sure about the line so got there at ~9:30am on a Saturday and we’re the first ones. It probably wasn’t necessary to get there that early because the next people didn’t arrive until probably 10:30, but hey it was fun and we got to watch them prep the food, absolutely no regrets. The guys were super cool and even gave us a few samples while we waited.

Everything was great, but standouts were the brisket boudin and jalapeño cheddar sausages and the banana pudding. Do not go here without getting the banana pudding…. you’ll thank me later.

Can’t recommend them enough, the only slight negative is that this is basically a food truck with limited seating and no bathrooms… which wouldn’t be a bit deal except I took my child who, of course has to go to the bathroom at the most inconvenient times ever….. so our dining got cut a bit short…

OMG!!! This place is an absolute hidden gem. It’s situated right off the highway next to Wise Honda. The reviews did not miss. Stopped in and got a bbq sandwich and the brisket chili. I almost thought I was in heaven. The people were very friendly and the food is amazing. I’ll be back for sure!!!

Great Texas BBQ, no question. Excellent flavor, brisket has perfect smoke rings, and sides are fantastic. Highly recommend the boudain-brisket links and pork belly fried rice. Turkey, ribs and brisket are all top notch. Hidden gem, for sure – or maybe not so hidden with the long lines, but worth it.
