Review: North Texas Smoke BBQ – Decatur’s Highway 287 Treasure
North Texas Smoke BBQ, a proud recipient of the prestigious Texas Monthly Top 50 BBQ award, operates out of a highly-praised food truck just off Highway 287 in Decatur. This is more than just a quick stop—it’s a destination. With ample outdoor seating and parking, the environment is welcoming, backed by a very friendly staff who are clearly passionate about their craft and well-connected in the BBQ community. Every item served is homemade, and the quality shines through in this exceptional spread.
The Smoked Meats
The meat selection at North Texas Smoke is executed with high-level pit mastery:
• Brisket: The brisket delivered on moisture and flavor. It was very moist and juicy, boasting a good smoke ring and a bark that was commendably good and firm. The only critique was that the bark was a little salty for my personal taste, slightly overwhelming the beef’s natural flavor.
• Spare Ribs: These ribs were juicy and deeply flavorful. They were mostly tender, retaining the desired bite that indicates proper doneness—although they did not fall off the bone. They were slightly tough near the edges, but the majority of the rib was excellent.
• Jalapeño & Cheddar Sausage: A solid link with a great foundation. The casing had a nice snap, which is a sign of a perfectly cooked sausage. While the flavor was good, the grind was not as loose as it should be for that classic Texas texture, making it feel a little denser than expected.
• Boudin Sausage: This was a clear standout and highly innovative. It featured an excellent mixture of smoked brisket and fragrant jasmine rice, creating a beautiful balance of smoke and starch. The link offered nice texture and flavors, encased in a great casing that held everything together beautifully.
The Bold and Homemade Sides
North Texas Smoke goes above and beyond with sides that are both creative and perfectly executed:
• Pork Belly Fried Rice: This is a fantastic, spicy creation. The base of basmati rice was delicious and provided all the right textures. It had a nice spicy kick and was generously mixed with tender pork belly, corn, peas, egg, and carrots. A highly memorable side dish.
• Street Corn: Absolutely awesome. The fresh corn was incredibly creamy, coated in a delightful spice combination of savory cotija cheese and bright bursts of jalapeño bits. It’s the perfect blend of creamy, salty, and spicy heat.
• Loaded Potato Salad: Served cold, this traditional side was done perfectly. It was properly “loaded” with generous amounts of cheddar cheese, crisp bacon, sharp red onion, and fresh chives. A classic side that provided a cool, refreshing counterpoint to the hot smoke.
Final Thoughts
North Texas Smoke BBQ deserves all the accolades. The meat program is strong, anchored by a moist brisket and flavorful spare ribs, while the Boudin Sausage stands out as a unique signature item. However, the true difference-maker is the quality and creativity of the homemade sides. This is a top-tier Texas BBQ experience delivered with authenticity and warmth.
Please note: This is not to say the bbq is not also fire, because it is. A couple more of my favorites from this joint include the brisket loaded spud, the frito pie when it’s cold, and my absolute runner up to the burger, the loaded potato salad. Year round NTS brings the heat, you’ve made a lifer out of this one, much love!
Everything was great, but standouts were the brisket boudin and jalapeño cheddar sausages and the banana pudding. Do not go here without getting the banana pudding…. you’ll thank me later.
Can’t recommend them enough, the only slight negative is that this is basically a food truck with limited seating and no bathrooms… which wouldn’t be a bit deal except I took my child who, of course has to go to the bathroom at the most inconvenient times ever….. so our dining got cut a bit short…
