The dishes were the true highlight. I ordered several of Nobu’s signature plates, and each one showcased the restaurant’s famous Japanese‑Peruvian craftsmanship:

Once she took our order, I went to the restroom (which is not in the restaurant, but about a fourth of a mile down the hotel lobby) and when I came back, all of my husband’s food was already at the table. It looked like everything was pre-made. I ordered a California and shrimp tempura roll (both hand cut) as well as edamame and all three were lackluster.
The edamame was not steamed thoroughly and the sea salt was thrown on top, rather than seasoned in, so when you took a bit, all the salt fell off the bean. The rolls were made of brown rice (not a fan of) and flavorless. The amount of crab in each roll was disgusting for the price ($35 for a California roll when what you can get at Costco far surpasses the flavor).
We ended up paying (pre-tax) 128 for our food and my husbands beer…. Completely not worth it. We will never go back.
Service: The service was good overall, though a bit confusing — two different servers took our order, making me feel like I was trying to figure out which twin sister was my prom date before the first kiss. Still, they were attentive and kept things moving smoothly.
The Food:
We kept our order to just three items but got a lot of each, and that restraint paid off. Of course, the never-fail miso cod was a must. For the five of us, we ordered four servings, and there wasn’t a bite left. This dish will always be my Nobu go-to.
We also had 24 pieces of the spicy tuna on crispy rice (I think it’s two pieces per order). Nobu’s unique take on this dish, with a sweet glaze that adds a surprising twist, makes it a winner every time.
Unexpected Standout: The Caesar salad caught me off guard–in the best way. I think there was a hint of wasabi in the dressing, and it was phenomenal. We ended up ordering four plates, and honestly, if I were dining solo, I’d be content with three of these and an order of the spicy tuna. Huge fan.
Dessert: Sadly, dessert was underwhelming. The Bento Box (flourless chocolate cake with green tea matcha ice cream) was good as usual, but the Haupia coconut pudding with berries? A major letdown, tasting more like a 7-Eleven dessert in Hong Kong (and yes, I’ve had it there, so I know).
All in all, the meal was so good that I can overlook the dessert slip-up. Definitely worth the return trip!
The prices are exorbitant, with sushi costing $15 per piece, which I wouldn’t mind paying if the quality matched the price. However, most of the dishes were overwhelmed by sauces, masking the flavors of the main ingredients. One glaring example was the tempura shrimp, which were drenched in mayonnaise, completely overshadowing the shrimp and leaving the tempura soggy. The dish was simply served on some lettuce, which felt careless and unrefined.
The service was also lacking. Our server seemed impatient, and we were given a last call while we were still enjoying our final glass of wine. It felt like the restaurant relies more on its prestigious name than on delivering a truly exceptional dining experience.
In summary, Nobu in Las Vegas is not worth the price. It’s a restaurant that seems to coast on its fancy name without offering the culinary excellence one would expect. I wouldn’t recommend it, especially considering the value for money.
Best part was the food and cocktails. Hubbs thoroughly enjoyed the old fashioned made with Japanese whiskey, and I had a pineapple based cocktail that was perfectly sweet. Started with the yellotail jalapeno, the fish had a mild sweetness and tasted very fresh, with the sauce and jalapeno providing a nice balance. My husband said this was his favorite dish of the night which was a pleasant surprise. We also ordered the sashimi salad, the dressing was potent but delicious, and there was a generous amount of tuna mingling with the salad leaves and garnish. Husband ordered the shrimp and veggie tempura combo which he said was fried well and not greasy. The miso black cod was the highlight for me though. The sauce had so much umami and it was a perfect foil to the fish. It was my first time having black cod and I made sure to savor it, I just wish they offered a small bowl of rice with it to make it more of a meal. Finishing off dinner with their version of sticky toffee pudding was a nice touch, it wasn’t overly sweet and the texture wasn’t too mushy.
Service and atmosphere had its ups and downs. Our server was nice but we could tell she was covering a lot of tables so we didn’t get checked on as much. The food always came out to proper temperature but it also took a long time, not sure if that’s their pacing or if the kitchen was backed up. What I will say is the staff were able to accommodate my shellfish allergy and let me know that my initial cocktail choice was sold out and made a good alternative recommendation.
It was really loud in the restaurant though between the guests and the staff, and coupled with the music coming from the main walkway it was an eclectic mix of sounds. Not the place to have a quiet dinner.
My husband and I enjoyed the meal so I recommend it based on that (even at the $$$+ price tag), but the atmosphere wasn’t our favorite so I probably wouldn’t come back anytime soon.
