Hidden gem in Branson area (Hollister) for Chicago style pizza. Great food, awesome staff, Brittney L was a great server. Without going into the nuances of pan, deep dish & stuff pizzas they make a deep dish that can rival some places in Chicago. The thin crust looked great to and I’m sure it hold it’s own too, The spinach dip is amazing. The atmosphere is straight up old school Chicago joint, from the pictures of Capone to Friends and Family. Hollister is lucky to have this place.

So this review is a lil late 4-26-2025

We’ve been looking for a true Chicago style Deep dish pizza … THIS IS NOT THE PLACE FOR THAT

BUT This place has awesome Chicago style pizza and food . Along with awesome staff and ambiance .

Upon arriving, the parking lot was packed, so packed we almost didn’t stop. However, there was a parking lot attendant that directed us into an open spot.

We were greeted and sat within seconds upon entering, I don’t remember the name of the server . However , she is pictured below and took her time to explain and recommend items on the menu .

If I didn’t live 90 miles away , I’d come back just because of her.

I Also love the uniforms .

We ordered the Crab bites … Oh My Gosh Sweet and savory filled goodness . I didn’t even mend the dipping sauce
Which is honey mustard
Are they worth the price … Oh YES

toasted Ravioli. What can say about this regional cuisine. But oh so good . Toasted but not over done and the flavor of the marinara sauce . Delectable. And I don’t like marinara.

We ordered a medium Mr Gilbertis . I tell ya . It’s loaded with toppings and cheese . The cheese pull is excellent.

2 slices done is in . And we had lots to take home .

The only negative, is this place is not cheap
But I can tell ya , it is well worth the price .

I hope to come back again soon (even though it’s been 6 months )

My primary concern was the pricing. Most menu items were priced at twenty dollars or more, which felt inconsistent with the overall atmosphere of the restaurant. While I recognize that factors such as made to order preparation and ingredient quality contribute to higher costs, continual justification of these prices may present challenges for future customers.

Although many guests visit this establishment primarily for the pizza, we chose to explore several of the Italian dishes, all of which were excellent. The service was commendable from the moment we arrived in the parking lot to the time we were seated inside. The staff demonstrated warmth and attentiveness, which helped ease the natural adjustments that come with a newly opened restaurant.

Overall, the food and service were impressive, though the value relative to the setting may benefit from further consideration.

Every year we go to Branson, when you’re in you’re 50’s you’re dancing around being old which means the highlight of a trip is “where we gonna eat next”? Last year we struggled to find good food for some reason but this year was different, we had great breakfasts and dinners all week.
We ventured out to Holister for this stop and found a little slice of Chicago and Chicago style pizza. Had to wait on the pie as to be expected and it was worth it and the crab bites were a great starter.
They really sold the homeade pumpkin cream cake at the end, we bit on that to go. Didn’t realize they are 16.95 a slice. I’d almost say its worth it, but not quite. Thats allot for any dessert, most I’ve paid ever…
Great little place I highly recommend.

This was our first time there. The food was wonderful, we got Potabella fries, Pizza, Eggplant Parmesan & some kind of chocolate cake…our service was good too. We went at an off time, but they really got busy after we got there. You don’t want to go if you are in a hurry. Glad we went, I’m sure we’ll be back next time we come.

After seeing a One Bite review of Mr. Gilberti’s, I realized it was nearby and decided to finally give it a try. I’ve been wanting to taste some of the spots he features, and this one did not disappoint.

First thing to note—parking is tough. The place was absolutely packed, which already told me they must be doing something right. The wait ended up being over an hour, but that’s because they make everything from scratch.

When the pizza came out, it was clear why people are willing to wait. The crust had that hearty Chicago-style bite, the toppings were fresh, and the flavor overall was really satisfying. Not the absolute best I’ve ever had, but definitely a solid pie.

The only real downside was the price. For two pizzas and drinks, the bill was right around $100. That’s on the expensive side, but you can tell you’re paying for the quality and the authentic, from-scratch process.

For me, it lands right around a 7/10. Worth the drive, worth the wait, but just know it isn’t cheap.

Great little spot to eat informal. We visited on a Monday afternoon and only 1 other person was there. (Just missed lunch crowd and beat the dinner crowd).

The salad was good, pizza great! Bread was nothing special.

Glad we searched for this online, as it is tucked away from all the chaos in Branson.

⭐️⭐️⭐️⭐️⭐️

Mr. Gilberti’s Place Chicago Pizza in Hollister, Missouri is an absolute gem and hands down one of the best restaurants in the entire Branson area. If you’re a true Chicago-style pizza lover, this place is the real deal — no shortcuts, no gimmicks, just authentic, old-school Chicago flavor made with love and pride.

I’ve had deep dish pizza all over Chicago and across the country, but nothing comes close to what Mr. Gilberti’s is serving. From the moment that piping hot pan hits the table, you can tell you’re about to experience something special. The crust is buttery, crisp on the edges, and perfectly layered to hold that thick, rich sauce and generous toppings. The cheese pull alone is enough to make you fall in love, and the flavor just keeps getting better with every bite.

Their supreme pizza is my personal favorite — it’s loaded with everything you could possibly want and each ingredient tastes fresh and thoughtfully balanced. The real standout, though, is their homemade Italian sausage. You can tell it’s made from scratch because it has that perfect texture, seasoning, and authentic flavor that you just don’t find anywhere else. It ties the whole pizza together beautifully.

What makes this place even more special is the story behind it. The original owners truly gave their life and passion to perfecting Chicago-style pizza, and it shows. The new owners have done a phenomenal job carrying that torch — keeping the tradition alive while continuing to deliver that same level of excellence that made this spot legendary in the first place.

The atmosphere is cozy, welcoming, and full of charm. It feels like a true neighborhood restaurant where everyone’s treated like family. You can sense the heart behind everything they do, from the food to the service.

If you’re anywhere near Hollister or Branson, do yourself a favor and make the trip to Mr. Gilberti’s Place. It’s more than just pizza — it’s an experience. Authentic Chicago flavor, genuine hospitality, and food made with passion. Easily the best Chicago-style pizza in America, and that’s coming from someone who’s had it all.

This is nice spot for a Chicago thin crust. They use very good ingredients and take pride in their pizza. If you are looking for the typical Midwest monster cheese loaf w/sauce this may not be the spot, of course unless you are looking for a pizza done the way it was intended. Side salad needs a little help but at lest they have one.

We love coming here once a year with our grandparents. The pizza is always so fresh and delicious, the owner and his wife always come talk to us and the kids whenever they are there. The strawberry cake is top notch! Would always recommend this place.
