If you have a “dessert stomach” that miraculously opens up after a heavy dinner, Monarca Gourmet Paletas is your new favorite playground. It’s colorful, fun, and offers a level of customization that turns a simple popsicle into a gourmet experience.
I walked in fully intending to try one of their legendary waffle concoctions (which looked incredible), but dinner had other plans. Instead, I opted for a Mango Paleta dressed up with Tajin and Chamoy.
It was spectacular. The balance of the sweet, frozen mango with the salty, spicy kick of the Tajin and the tang of the Chamoy was 10/10. It’s the perfect refreshing treat that doesn’t leave you feeling weighed down. The quality of the fruit base is obvious—this isn’t your average grocery store popsicle; it’s artisanal.
• The Atmosphere: The shop is vibrant and incredibly clean. It’s the kind of place where you want to take a photo of your food before you take a bite.

Oh wow! Delicious Paletas (tastes like amazing creamy ice cream)! Many flavors to choose from! Add toppings and it’s so yummy!! Very nice staff! Very clean. There are also some gluten free options and other options! I would highly recommend it!!

Even though I didn’t visit the shop in person, the ice cream was brought to me all the way from Iowa to Chicago — and it was still incredible. Every flavor was rich, creamy, and so fresh. I honestly can say I’ve never tasted such delicious Paletas before. You can really tell how much care and quality goes into what they make.

Very intriguing flavor combos! I got wierd with a pineapple-mint palette with taking. I’d only put it on one side if I did it again, though. My son got a banana palette filled with Nutella, dipped in hazelnut sauce with peanuts and a Carmel drizzle it was phenomenal! My daughter got Strawberry cheesecake dipped in white chocolate with oreo crumbles, also outstanding! What a cool treat!

Now open! We decided to not waste any time checking this place out. No experience with paletas. The staff was very helpful explaining the process. I was feeling a light, refreshing treat so I went with the lime and my wife chose the strawberry cheesecake. I added tajin and chamoi sauce to mine at the direction of our helper at the counter and my wife added dark chocolate and cookie butter sauces. She then added oreo topping. Our bill was about $12 before tip. We both enjoyed our first experience with paletas. I definitely want to try other combos because there’s quite a variety depending on if you’re looking for a light, popsicle treat or more indulgent chocolaty ice cream snack.
Seating is spacious. Art is beautiful. Volume of music behind the counter made it difficult to hear the server, but hey, it’s day 1. It wasn’t overbearing once we were seated.
This is a great addition to the area and I recommend checking them out!
