I’ve visited three times now, and all I can say is wow—this place is amazing. I did the tasting menu last night and was completely blown away. Hands down the best Mexican food in Denver.

From the regular menu, I’ve loved the flautas and the al pastor tacos—the tortillas are incredible. The tasting menu was beautifully executed and very filling, with five well-thought-out courses and excellent drink pairings.

Service has been outstanding every time, both with the regular menu and the tasting menu. Can’t recommend this place enough.

So glad Molino Chido opened — such a fun addition to the area. I love the concept, the energy, and especially the flavors. Everything we tried was delicious, but the lengua tacos are an absolute standout. The spicy margarita definitely brings the heat, too.

As a Chicana, I set my expectations pretty high for Mexican food. Especially if it’s outside of Mexico. There’s only ONE PLACE in the U.S. that has truly captured CDMX in a restaurant in my personal opinion, and unfortunately, this was not the one to replace it.

Don’t get me wrong, the service was great. Our server was informative and attentive. The location is great, and the ambiance is awesome. But the food. I ordered the flautas, and they were overwhelmingly seasoned. I’d say tone down the curry, then we’d hit a good spot. But I appreciated the unique take on traditional flautas, I’ll give them that.

I ordered one taco al pastor. The tortilla, AWESOME. The texture and taste reminded me of those my abuela would make. So, kudos for nailing that! But the meat… I looked at the trompo in the kitchen (it was within view from where I was seated), and it was dry as a bone. Resulting in almost crispy meat in my taco. Not moist, but crunchy. Tacos al pastor are not supposed to be crunchy. But I ordered one, so I thought, ok, let me order 2 more, just in case. The flavor was good, I enjoyed the amount of pineapple and onion added onto it, but the texture was way off.

The next 2 tacos were even crunchier?? I was sad. Que paso?! Idk if I’ll come back, maybe if someone I know really wants to try it, I’ll agree to join, but on my own? Doubt it… 🙁

Really had high expectations considering the owners. Let’s start with the good. You first arrive and immediately experience Señoras in the molino making the tortillas, most excellent. They nailed the decor and very much has a CDMX vibe. You sit down and just feel you’re going to eat well. We admired the ambience…waiting in anticipation and then our food arrived. Very quick. Almost too quick. Can’t really say the food is comparable to CDMX street taco experience. We tried al pastor, Pavo (very unique taco), and mushroom and felt that would give a good indication of the how the rest of the menu would deliver. Let’s start with the fresh made tortillas from the Molino, they were served cold, which is just a no and not respectful of the señoras. The al pastor, you could barely taste and also cold. The Pavo was too spicy, almost inedible, and the mushroom was overwhelming served in too much sauce. One out of two mushroom tacos was good, so not consistent. What was good? The salsas that are on the table (they remain there between guests – at your own risk I guess), service, and the overpriced jamaica (hibiscus water). The jamaica was probably 4-6 ounces and $7. Not worth it. I’d recommend going down the street to La Plaza food hall for Al pastor and Jamaica or obviously La Diabla. Hopefully this restaurant is just working out the kinks because as of now, doesn’t live up to the hype or the prices. Two people, 7 tacos, 2 jamaica was $60 without tip. Maybe the other food items are better but I can’t say I’d be very excited to return. I hope it all works out as this marketplace has been in need for a concept like this for as long as I’ve lived here, 8 years.

1000/10! Absolutely loved the authentic tables and chairs – great aesthetic reminds me of the small mom and pop restaurants in Mexico. Very nostalgic! The food was incredible and insanely flavorful. Cannot wait to come back! Enjoyed the chef’s playlist too! This place has a pleasant vibe.

Arrived hungry, left with plenty more.
The staff at Molino is welcoming and passionate and immediately felt like family. The food is beautiful and thoughtful and most importantly, authentic. The balance between the casual environment and highly curated dishes calls for friend gatherings and lots of laughter.

My friend and I ordered and shared the Aguachile Verde, Flautas, tacos de lengua y de campechana. All recommendations from the hostess and she did NOT MISS. The drinks were also EXCELLENT. A glass of white wine paired incredibly well with the Aguachile and the following cocktails were all crafted to perfection.

Grab a seat and enjoy this very special restaurant. I rate this Molino 10/10 CHIDO!

Molino Chido is fantastic. This new taqueria from chefs Tommy Lee and Michael Diaz de Leon delivers on every level.

The food is outstanding, starting with the homemade corn tortillas, which are clearly made with care and intention. Every dish we tried was flavorful, balanced, and exciting without losing its connection to tradition.

You can really feel the heart behind this place. It is a celebration of culture, craft, and community, blending classic techniques with creative twists that actually work.

Standout dishes included the al pastor tacos, the pavo taco with recado negro, the prime strip loin, the quesadilla with queso chihuahua and salsa macha, the aguachile rojo, and the curry potato flautas. Everything was excellent.

I cannot wait to go back and try more. Highly recommend making a reservation and checking it out soon.

Really good tacos. Like others say, the tortillas are as flavorful as they come. Delicious. Also the Taleta was really good. Never had before. Mole like sauce and fresh thick tortilla. The only disappointment was the ceviche. Not that great. Go!

I have been 4 times now, the first 3 times the ordering was a bit weird, but they have changed it to ordering at your table (which I prefer!). For the food, it is sooooo good. I have tried lots of different items on the menu, the frijoles (beans) are amazing, the veggie taco is my favorite. Everything I have tried has been really amazing. Ceviche, taquitos, quesadillas, shrimp taco, steak taco….
I also will add that every time I have been the service has been really great and attentive, so my experience has been very positive with that.
I do want to add that it feels a little pricey for the servings and ambience, HOWEVER, the ingredients are quality and you can taste that, for the ambience, if you have explored Mexico City, you will totally understand concept.

I’m very happy to have a place like this so close to me! I love it.

Pricey, small plates, but worth it in my opinion.
Started with tepache (9/10) and agua de jamaica (8/10).
Ordered their unique ceviche with mahi mahi which was surprisingly delicious! I was also told they use coconut milk so it’s dairy free. 9/10

Gringa Al pastor – my friend said this was good. 8/10

Tacos:
My friend said the lengua was some of the most tender he’s had. 10/10
Prime strip loin & campechano 8/10- love the fresh tortillas ofc.
* from the palate of someone who likes serranos with every meal if possible, I’m told none of the 3 salsas were very spicy
