2. If you do like donuts, then you might have a favorite kind of donut – e.g. cider doughnut, or raised, or cake, or something else. Consider the analogy to ice cream: some people really like dense ice creams like Ben and Jerry’s, other’s prefer ice creams with more air mixed in, like Breyers, or Tillamook, and some find the inclusion of guar gum in the Wilcox recipe give it a delightful chewiness, while others would… eschew the guar gum. Sorry… I could not resist. But – you take the point: there are different strokes for different folks. So, I’m about to sing the praises of a specific *kind* of donut that I find extraordinary.

If you enjoy a raised donut that retains a higher density than the Dunkin’ variety, i.e. one that has a stretchy gluten structure while remaining *dense* – then you should make your way to Mercantile Bakery in Chester VT. They make these donuts in house, but only in small batches because their fryer is small. So, it’s worth calling ahead (and perhaps asking them if they’re willing to set some aside) to see if they have some.
How good are these? Well, I’m not a doughnut maniac. I would not even rate them in my top five favorite sweet treats. Also, I’m what a dog trainer would call a “resource guarder” who might show “possessive aggression” with regards to food. Family members know to *ask* if they want to taste from my plate in a restaurant. The answer is usually yes, but there’s a shield of possessiveness that needs to be negotiated. So, I share those as context for my experience and actions with these donuts.
I bit into one and almost promptly overwhelmed my entire dopamine system. Was I crying? Or was that dopamine leaking out from my eyeballs? I took a second bite. Just as good. At that point I pulled it dramatically away from my face and fixed it with the proverbial “steely gaze.” What was my next move here? I knew the “right” move and managed to execute: the rest of this donut needed to come home to the family (4 sons and 1 wife) so I could evangelize with evidence. I assessed that the remaining donut could plausibly be split five ways for everyone to get a taste and, like a marshmallow deferred gratification test of yore, I knew that my case for “Oh… we should stop in and see if they have donuts” on future trips would be much easier to make if everyone was given a taste. This was a long game to play…
Was that remaining donut cut into five even pieces? No…. There were two more of my own samplings along the way… I had to convince myself that I wasn’t off-base, to reassure myself – was I imagining this? I was NOT! So… two more samples and then the remainder was distributed in the family. The consensus was these truly were exceptional donuts. I believe I have made my case to them.
