
MENYA MUSASHI was founded by Takeshi Yamada in 1996. We have 14 ramen restaurants in Japan, with overseas locations in Singapore, Taiwan, China, Malaysia, Indonesia and Ukraine. In November 2018, we opened first US branch in Capitol Hill, Seattle. We offer a variety of dishes, including traditional ramen, vegan ramen, and tsukemen (dipping style ramen), which soup and noodles are served separately. I decided to go with the original pork tonkotsu ramen with added egg.
My ramen came out within ten minutes of me sitting down. I could smell the seared pork fat on the pork belly and it smelled spectacular. There was a small jar of dry chili and garlic, I sprinkled many spoons onto my ramen, it wasn’t too spicy at all. I just love dried garlic.
The pork broth was rich and heartwarming. The noodles were bouncy and chewy. The pork belly fell apart in my mouth, the sear on the pork belly enhanced its flavor more. I love the Woodear mushrooms in the ramen, as well as the spinach. The eggs seem like they were marinated in a soy base sauce. The best ramen I have tried so far, I can’t wait to try the other flavors .
We went back again! It was just as amazing as the first time and I got the hybrid ramen with a potato croquette bao and my partner got curry +ramen. Omg. Melt-in-your-mouth pork and a lovely crunch on the croquette! I would have gladly swapped bites 1:1 with my partner’s lunch if he’d have let me…

Incredibly tender fried chicken, with a crispy outside… we’ll definitely be coming back so I can try more things! The bites I stole of my partner’s curry were also incredible, so maybe I’ll get that next time?
Self order at the kiosk and everything is brought to your table. No cash accepted. Lots of parking, good service.
The dine-in area is quite small, so takeout seems to be a more common option for most customers.
In addition to that, the service was extremely unprofessional. We had four adults and a 1-year-old baby. Even though there were empty tables, a server named Branda refused to let us sit, interfered when another customer kindly agreed to switch seats with us, and refused to clean the table while our food was already ready and getting cold. We were forced to stand holding our baby for a long time.
When we questioned her behavior, she became upset and called the manager. The manager later resolved the seating issue and apologized.
Each of us spent about $35 per person. Between the health issue after the meal and the poor service, this was a very disappointing and concerning experience.
