
In 2008, Chef Naoto Niiyama opened Menya Hanabi in Nagoya, Japan. What started as a local ramen shop soon gained national recognition. Not one to rest on success, Naoto began experimenting with new types of ramen. One brothless breakthrough later, the Original Nagoya Mazesoba was born. Sometimes referred to as mazemen, mazesoba is a brothless ramen created by our own Chef Naoto Niiyama. Menya Hanabi’s original recipe includes noodles developed in-house, a special sauce base, spicy minced pork, green onion, chives and garlic. All topped off with a poached egg. We serve it, you mix it together and enjoy.

The balance of flavors in their deluxe nagoya mazesoba bowl ($19) is absolutely incredible – it contains a poached egg, ajitama, chashu, seaweed, minced pork, green onions, fish powder, and garlic over their thick noodles. the flavors are so balanced and everything mixed together creates the perfect bite – adding vinegar after savoring the richness for a while cuts the fatty goodness and makes not finishing the rest of your bowl impossible.
we also tried their potato croquettes and takoyaki, both delicious and light and crispy, and freshly made to order. The matcha was also very good and a lovely deep green, not too milky or too sweet, but didn’t taste like a mouthful of grass either.

It was a bit spicier than I would like, but the flavor was good. I think I’ll opt to try the non spicy next time. Chashu was good.
We got there right at 11:30 on a Tuesday and there was no wait, but it filled up around 11:45ish. Service was nice and quick and the waitress was friendly.
I think this is one of the better ramen/mazemen spots in the OC and I would recommend going here.
The matcha latte was REALLY good! Not too sweet and had a really great, strong matcha flavour and was mixed really well.
They were playing Linkin Park music and older rock music from early 2000s which I LOVED. It was super nostalgic, haha. I want to come back to try their appetizers! BTW, it’s card only.
Been to the spot in sawtelle as well. The food was very comparable. We tried many things and one take away was we much preferred the karaage here than the one in japan town.
The mazemen is amazing. Very chewy and tasty. Id hold off on the vineagar tile having several bites as this will give you two very different but enjoyable bites.

Restaurant – clean and orderly. Very easy to understand menu
Food – my favorite dish is the deluxe bowl and the Karage. The bowl is bursting with flavor in every bite. They also give you free rice to finish with your extra meat sauce. The Karage is the best in town. Big juicy pieces – not those skimpy popcorn chickens.
EVERY SINGLE piece is juicy. You can tell they really make sure every piece of meat is good quality.
Matcha Latte – I have not tasted such a balanced matcha latte anywhere close by. Other places are either too matcha dense or too sweet with no matcha flavor.
Staff – the staff are so nice. They have been so busy with grand opening and still keeping their cool.
Owners – the owners are something else. They are the most appreciative restaurant owners I’ve met in a while. You can tell they are really passionate about food.

The food itself is so delicious! It has flavor, umami, and depth all in one bowl. You can tell that each bowl is made with love and uses fresh and real ingredients. I love the variety of entree choices there are as well and each time I try to get something different to try everything. I recommend adding their poached egg so it makes everything creamy and yummy! Their spicy is also quite spicy for me since it’s all in the meat which is their sauce overall, but it’s so good for a once in a while meal. Another fave is their curry!!
At the end of the meal, when dining in, they’ll offer a small scoop of rice to add to your bowl since most of the time, there will be leftover sauce. It mixes soooo well and the small scoop is more than enough for me since I’d be so full already. Can’t let the sauce go to waste though take it to-go if you need to! :p
We got the original and chashu! Can never go wrong with the classic. Also, I recommend their iced homemade matcha latte. Thank me later!!
Service is great even though they’re in soft opening at the moment! They came to check on us a few times. I noticed the owner went around to make sure tables had everything they needed or asked how everything was.
We did come on a Friday evening and it was quite packed, so I’d prepare to wait for at least 10-15 minutes just in case.
Overall, we love Menya Hanabi!! Come visit regardless if you’re trying for the first time or a long time fan. Congrats on this 2nd location!! 🙂
