After an unexpected situation a few days ago that led to our reservation being cancelled on the day, I was truly delighted that the restaurant reached out and invited us back while I was still in San Juan. The gesture and follow-up completely turned the experience around.
The dinner was outstanding. We enjoyed a beautifully curated five-course meal that showcased an impressive balance of colours, textures, and flavours, perfectly aligned with the theme. Each course was refined, creative, and executed with great attention to detail.

We went here as two couples, we got to sit in a somewhat private area with curtains. Everything was very well explained from the menu. And everything we had was extremely tasty. I had the lamb tagine as my main and the passion fruit dessert. All my courses were super delicious. I would definitely recommend it to those who want a little more high end experience and really good food and service.

Marmalade is led by Chef Peter Schintler, who was actually present in the restaurant on January 1st and personally overseeing the kitchen. The experience is excellent overall. While it is on the expensive side, the quality of the ingredients and the five-course tasting menu make it worth it. Compared to similar restaurants globally, the pricing is slightly above average, but it still offers a very solid fine-dining experience in Old San Juan. A couple of dishes felt a bit simple, but their signature soup, which has been on the menu for more than ten years, is outstanding. I would definitely return.

Celebrating my daughter’s achievements and milestones made this Christmas Eve especially meaningful, and we are deeply grateful for the experience. From the moment we arrived, the atmosphere felt warm and welcoming, and the service was attentive, thoughtful, and never rushed. We truly appreciated the care and intentionality shown by the staff, which allowed us to slow down, be present, and fully enjoy our time together.
We thoroughly enjoyed the lobster risotto, the malanga and black garlic gnocchi, and the perfectly prepared beef tenderloin. The tiny white bean soup with truffles was comforting and consistently exceeds our expectations—it is truly a favorite every time we visit. We are especially thankful for the extra effort taken to prepare the Global Warming mocktail as an alcohol-free option; that level of consideration made the experience even more special. Our dessert highlight was the passion fruit dessert with pistachio ice cream, a bright, balanced, and memorable way to end the meal.
Above all, we are grateful not only for an excellent dining experience, but for the opportunity to celebrate family, milestones, and the season itself. Jesus is the reason for the season, and this Christmas Eve at Marmalade provided a beautiful setting to reflect, give thanks, and share a meaningful moment together.

Marmalade was the perfect ending to my trip. I came here alone on the last night of a medical conference and sat at the bar, and the experience couldn’t have been better. The service was impeccable, warm, attentive, and made me feel completely welcome as a solo diner.
The food was genuinely inventive, beautifully executed, and surprisingly filling in the best way. Honestly, everything felt like a highlight, each dish had its own “wow” factor. If you’re in San Juan, Marmalade is a must. I’ll be thinking about this meal for a long time and can’t wait to come back.

Our 27th wedding anniversary in Puerto Rico was unforgettable — my husband completely surprised me with dinner at Marmalade! From the moment we walked in, we were treated like the only guests in the restaurant. The table was beautifully set with flower petals, and every dish that came out was a masterpiece.
My husband did the wine pairing, and each time a new glass arrived, our amazing server, Anna, explained its origin and why it paired perfectly with the course. She was warm, attentive, and so knowledgeable — truly the best of the best. Even though she had other tables, she made us feel like we were her only focus.
It was one of the most memorable dining experiences we’ve ever had — the perfect way to celebrate 27 years together. Thank you to the entire staff at Marmalade, truly top class!

Prior to traveling to San Juan, I had asked some world traveling foodie friends where the most delicious food was in Puerto Rico, and without a hesitation they expressed to “DEFINITELY book at Marmalade” as it was “the best meal they have ever had” in all of their worldly travels and dining experiences…I took their word, and the expectation and experience was fulfilled even more than I could have anticipated. The humble restaurant facade holds a secret and decadent experience just inside. From the moment you enter the doors, you are welcomed by a gracious host, paired with a sophisticated, yet cozy atmosphere. The knowledgeable, kind, and caring staff will ensure each and every moment of interaction is a high end experience, with every detail attended to. In the last year, I have traveled to San Juan multiple times, knowing I will be arriving back to Marmalade to indulge in the experience, and every time, I am grateful I did. From the white bean soup to the 8 layer chocolate dessert, I dream of their food, and think fondly of the extra care the team puts into ensuring exemplary experience for all. As someone once said to me, I will happily pass along to anyone to “DEFINITELY book at Marmalade”, as it is “the best meal I have ever had”.

Great experience. Our server “Amber” was very attentive and warm. We were celebrating my birthday and every member of the team celebrated with me. Food was GREAT. There are five courses and you select all but one. Drinks are good and they have non-alcoholic options too… or so my wife says

The four of us, who are definite “foodies” dined here and we were blown away by the fabulous food and service! We are all in our 60’s and have eaten all over the world and travel to food destinations- each of us stated that it was the finest dining experience that we’d ever had! Not only was the food different, modern and amazing- the service was impeccable and was worth every penny! In the end our bill with wine was $200+/person.
