Au Jus.
It is very apparent to me on the times I’ve called that they do not have any interest in making money because they won’t take your order at 20 till nine or even an hr before they close…or they just refuse to answer the phone(I know they close at different times).
This is the exact reason people drive to Marion to pick up their food and I’m sorry that’s the reason why they DoorDash from Marion because this town is just getting more and more lazy, every time I turn around! But best of luck to them! I just barely liked anything but a cheaper delivery fee, than door dash! I hope they try something else besides hunts/ketchup traditional sauce! Or make their own sauce
I always start with the crust, because that’s the foundation of a great pizza. Their crust is made in-house, and is a nice thin, yet foldable, pizza crust with that delicious hint of yeastiness and a great chew. Sauced edge-to-edge, it has the tastiest edges around.
And the next most important element of a great pizza: the sauce. And that sauce is delicious! It’s thick, plentiful, and savory with a subtle hint of sweetness that comes from a good tomato paste. Seasoned beautifully, it meshed well with the crust, cheese, and toppings. And as I mentioned earlier, that pizza was wall to wall sauced—a rarity, usually only found in St. Louis-style pizza.
Time for the lowdown on the toppings and cheese Let’s start with the mozzarella cheese that was liberally sprinkled seemingly under AND over the toppings, with a decent stretch. Lovely quality cheese! The pepperoni was seasoned well and not overly greasy. The fresh mushrooms (my fave kind on pizza) were the perfect sized slices and were NOT leathery or dried out. I could have used more black olives; it had a typical amount but I like a heavy hand with the black olives. The ham was smoky and added a lot to the character of the pizza. I enjoyed it and I’m not even a ham-on-pizza kinda person. Now the one little glitch was in the sausage: to us, it didn’t have much of an Italian sausage flavor, more like a well-seasoned ground beef topping. Sadly, with its more delicate flavor, it lost its way in the rest of that fantastic pizza. I had to double-check to make sure it was on there, and ate a few pieces by themselves. That being said, it’s perfect if you order a sausage pizza, or sausage and mushroom, or my favorite on this style of crust: sausage, mushroom, and black olives. But it gets lost on the deluxe. I’m not sure if they make it in-house, I got distracted and forgot to ask
The digs: exposed bricks and spacious, extremely clean dining areas in an historical storefront in the heart of West Frankfort. They have a recessed outdoor dining area that would be perfect to sit in during a beautiful day, or listen to the storms roll in. I didn’t notice anything that said their backstory and inspiration for opening a pizza place, which would have been nice.
Overall experience and impression: this is truly outstanding pizza made by honest people. My order was originally carry-out but it was wrong (misread handwriting) so when we got there they brought out a 10” instead of a 16” (they don’t have medium pizzas). No big deal. Mistakes happen no matter what industry you work in, especially with new businesses; what matters is how the mistake is handled, and they took care of things right away, and took great care of us. I couldn’t have asked for a better pizza, or better customer service.
