Let’s Pho PV Vietnamese Cuisine, Puerto Vallarta, Mexico

Recently, we had the pleasure of dining at Lets Pho Vietnamese Kitchen in Puerto Vallarta, and let me tell you, they’ve earned a spot on our favorites list.

My friends and I just enjoyed one of the most delicious dinners tonight. We were so thoroughly impressed by the delicious flavors their chefs created. The vermicelli bun salad, the chili lemongrass chicken, the beef bowl and the beef fajita dish were all absolutely mind blowing. The service was attentive and very friendly. We just found a new favorite for our visits to Puerto Vallarta. We will 100% be back again during our visits.

The pho is fairly average, which is to say that it’s like the vast majority of vietnamese restaurants that are outside of large vietamese enclaves (such as, for those from the USA, Orange County and San Jose, CA). So I will give the food a 3 stars.

However, the service was quick, and my waiter was very friendly. I might even consider going back — though I probably never will because I’m here only as a tourist for a week and there are so many other restaurants to try — for the friendly service, but not for the pho. Therefore, I round up to 4 ⭐ overall.

Surprisingly good pho for a spot in Mexico—pretty authentic overall. The broth had great flavor, though the noodles were slightly wider than traditional pho noodles; I would’ve preferred them a bit thinner. We also tried a few other dishes, all of which were tasty. The restaurant has a nice vibe and is very well decorated, which added to the experience.

Service was excellent—fast and attentive. We were taken care of by four different waiters, which meant we never had to wait long for anything. We ordered white rice with pork, which was well-cooked and flavorful.

For drinks, we had a winter melon tea that was refreshing and a Thai tea (no ice) served in a huge margarita glass. The Thai tea flavor was spot on and the portion size was generous.

The total bill for two entrees and two drinks came to around 585 pesos, which felt like solid value for the quality and service. Definitely worth checking out if you’re craving pho in the area.

The spouse and I read about Chef Charlie Huynh and his new restaurant, Let’s Pho, in the summer 2025 issue of Out & About Puerto Vallarta magazine. We braved the muggy June weather for hot bowls of noodles.

ATMOSPHERE:
It’s a sizable restaurant located on the north side of Lazaro Cardenas Park. Opt from sidewalk or indoor seating. The two a/c’s weren’t on, so it was an open air sauna kept a little cooler with fans on high.

MENU:
Lengthy bar selections with a nice mix of Vietnamese dishes and desserts.

FOOD:
Naked Wings (5 pcs.)
We chose the tamarind flavor, which coated the wings in a sweet but overpowering flavor, seeds and all. Perhaps the garlic butter would’ve been a better choice.

Fried Pork Dumplings (4 pcs.)
The ginger soy dipping sauce was the star of this mainstream but delish app.

Pho-Vietnamese Signature Noodle Soup
I chose chicken in the large size which was a little more than I could finish. The broth was hot but not searing and was more on the savory end of the spectrum. A separate plate held bean sprouts, mint and cilantro for adding.

The spouse had the beef version but sent it back about a quarter way through as a small dead bug or roach surfaced as he was eating. The restaurant did redeem themselves by apologizing and not charging for it.

Vermicelli Bowl
The spouse’s second choice, which he liked but didn’t love as it wasn’t what he wanted to eat, originally. The piece of barbecued chicken I tasted was very flavorful and made me wish I ordered a chicken dish. Maybe next time.

SERVICE:
They were dead at 9:15 pm on a Saturday in June, so we practically had the whole place to ourselves.

We got sat quickly and the food came out similarly yet timed.

Our server was professional and checked on us throughout.

TIP:
Cards accepted.

OVERALL:
Good pho broth and nice menu selections.

I was thrilled that we stumbled upon this restaurant and decided to give it a try! This warm and inviting Vietnamese eatery truly delighted our taste buds. The owner and server were incredibly friendly and made us feel right at home. Here’s what we sampled:

Naked Wings(my picture might look boring but it’s PACKED with flavors), Beef Ceviche, Pork Eggrolls, a Steamed Rice Bowl with Vietnamese BBQ, and my personal favorite, the Vietnamese Beef Fajitas!

Each dish was packed with fantastic flavors that you definitely don’t want to miss!

If you’re in the mood for Southeast Asian cuisine, this place is a must-visit!

Fantastic pho! Very authentic and delicious. My wife and I were not feeling great and needed comfort food. This was just the ticket! We also got the tamarind wings. They were made perfectly crispy and saucy and hot! But the chicken pho was the star. The owner came to our table to introduce himself and make sure we were enjoying our meal.

We were excited to try this place, as pho is one of our favorite meals. We received a warm greeting and were sat immediately as there was nobody else there at 6pm?. I was happy to see that they had spring rolls and banh mi sandwiches. So we ordered them along with a bowl of beef pho. The spring rolls were a easy 8, the banh mi about a 7 (I’ve never had it with cubed chicken, it’s usually thin sliced?) and the pho just didn’t have the flavor and aromatics . It seemed to be watered down. For Ajijic it was good, but the prices are higher than at home. I wish them luck . But I don’t think this area will support these prices? I think the most you can get for a bowl of noodle soup with a little beef is $10. Good luck

Vietnamese Cuisine is making waves in Puerto Vallarta and I’m here for it!

One thing about me is when the food is amazing and the service is even better, you know I’m going back!

Recently, we had the pleasure of dining at Lets Pho Vietnamese Kitchen in Puerto Vallarta, and let me tell you, they’ve earned a spot on our favorites list. From the moment we walked in, the service was impeccable. The waitstaff worked together seamlessly and checked in on us to make sure everything was perfect. They even gave Orion a little toy to keep busy while we waited for our food. How thoughtful is that!

Now, let’s talk about the food! As a Thai Iced Tea lover, I can confidently say theirs is absolutely delicious. We enjoyed:

Fresh Spring Rolls (so light and tasty)

Kimchi French Fries with beef (a bold twist we couldn’t get enough of)

Breaded Fried Shrimp with Garlic & Butter (perfectly cooked and full of flavor)

This meal wasn’t just a treat for the taste buds, it was an experience.

If you’re in Puerto Vallarta or planning a visit, put this spot on your must-try list. It’s a great example of the vibrant food scene here, with so many incredible restaurants to discover.

They have a large selection of meat, vegetarian and vegan dishes. I had a vegan tofu/veggie stir fry dish with rice that was great. Prices were very reasonable. You can sit outside on the covered patio or inside a spacious comfortable interior where I was. The location is downtown Puerto Vallarta and just a few minutes from the ocean and the Malecon pathway. I recommend you try it in PV!

Such a pretty, charming place with friendly and welcoming staff. We shared the spring roll and egg roll appetizers. Then came the Pho bowl, fajitas, pork chop and vermicelli bowl. Each one delicious and beautifully presented. We almost said no to dessert and so glad we didn’t. Try the homemade coconut flan and the best carrot cake on the planet. If you don’t have room for dessert – take it home!
