People traveled from throughout the United States today to join the memorial and they represented diverse backgrounds, ages, and heritages. Few had ever had Cajun food before.
LaDeaux’s is a fairly new local establishment. They operate out of a giant trailer; they may be classified as a food truck, but this vehicle is a food trailer on steroids. We requested them to cater the event as food could be cooked on site in their vehicle as opposed to food prepared elsewhere in a chain kitchen and just transported to the event to be reheated. I will always choose fresh.
The funeral services were held inside a large structure with over 100-attendees. A concern was where their vehicle would be placed, this one was right outside the entrance door.
Most food trucks have portable generators strapped to their backs and although it may say whisper on it, they are not quiet. LaDeaux’s uses solar panels that return energy to batteries for storage and later electrical usage.
Because the trailer does not use a generator, we heard nothing coming from it. It was church quiet. And that is what we wanted.
When the functional component of the service was over, we had an open microphone for people to share stories while plates were fixed for lunch. The caterers managed the food by ensuring new trays came out when they got low. They helped serve the food but they also stayed back.
I have traveled on my stomach and love trying different foods. Quality establishments want you to return and to enjoy their food. The smokehouse pulled pork was moist, non-fatty, and lightly seasoned. The Creole pulled chicken had amazing flavors that did not bite back or cause pain. The mustard slaw was a nice variation on coleslaw. Coleslaw can be overly sweet but this one was not.
I ate two full plates of food and my mouth feel was well sated. They even make their own sauces. Utterly delicious.
Lastly, let me describe the scene of this event: This memorial had two fire apparatus onsite, one hanging a large American Flag that people drove by. A 13 member bagpipe and drum team played and escorted the widow. A firefighter Honor Guard stood at attention and delivered a folded flag to the widow. It was a combination somber, respectful, and professional service befitting for a man of our friend’s stature in life.
LaDeaux’s Bayou Kitchen & Smokehouse provided prompt service, quality food, in a clean and professional manner. They set up and took down their serving trays and whatnots and helped us maintain the air of civility that was wanted. And they exceeded our expectations on the quality, quantity, and enjoyment of their food.
Seek this food trailer out and strongly consider them for any large catering event. You will be glad you did. We are.
