My second visit to Rome and just on last minute I was able to catch a table in the only 3 Michelin Star Restaurant in Rome: La Pergola. Situated on the 9 th floor of the Rome Cavalieri (A Waldorf Astoria Hotel) it was another iconic place with a breathtaking view. But I was not here to catch a glimpse of the eternal city, instead I was searching to taste the high end of culinary art in my first visit to a three star restaurant. What was the expectation? I mean the chefs of the one and two star restaurants I visited before were no amateurs, and I was cooked into culinary heaven a lot of times before. Could La Pergola really go beyond and above, or would it only be a difference in an even more impressive list of waters and wines? Michelin itself explains their star system very simple. A one star restaurant is always worth a visit, a 2 star restaurant is always worth a detour and 3 star restaurant is always worth a journey. From this point of view I can say the setting was set right. After I was unable to catch a table on my Oktober trip to Rome (I went to Imàgo instead) I planned my journey solely to finally visit La Pergola. So the only question that remains is: „Was it worth it?“ the simple answer is YES. La Pergola is definitely worth a trip to Rome on its own. The service is perfect, but I have seen perfect service before, the food is perfectly crafted, but I have seen perfectly crafted food before. What I didn’t see before, at least not in this density, was that most of the 10 courses really hit me with surprise in a deep form of satisfaction and joy. Finding myself far beyond my expectations on most of the dishes made me certain, even if La Pergola would be in the dark depths of nowhere, I would still want to go there to try their tasting menu!

Seating, menu presentation, and initial engagement were all handled with calm precision.
The cuisine fully justified the restaurant’s three Michelin stars. Each course demonstrated technical mastery, depth of flavor, and classical discipline executed at the highest level. Portions were generous without ever compromising refinement. This was luxurious dining in the truest sense: abundant, assured, and unapologetically complete.
The progression of the meal was particularly well judged, building steadily toward an elaborate and indulgent conclusion. The dessert course—stacked, expansive, and celebratory—was almost excessive in volume, yet impossible to resist. It served as a fitting final statement to an evening defined by generosity and confidence rather than restraint.
Service throughout was exemplary. The staff operated with seamless coordination, attentiveness without intrusion, and a level of polish that never felt rehearsed. Timing was impeccable, explanations were concise and informed, and every interaction reinforced the sense that this was a dining room functioning at the peak of its craft.
La Pergola stands exactly where it should in the Michelin hierarchy. The three stars are not aspirational here; they are fully realized. This is a restaurant that represents the pinnacle of fine dining—technically, emotionally, and experientially—and it delivers on that promise without compromise.

Anyone who rates this restaurant less than five stars doesn’t know what they’re talking about. It’s expensive, but you know that before you arrive. I’ve been to more than a dozen Michelin three star restaurants all over the world. This rates in the top five. The food is mind blowing. The people are not stuffy. My only criticism would be the decor. It needs an update. Otherwise, perfection. And, if you are booked out 90 days in advance, why change anything?

it was the first stop on our wedding trip to rome; when we entered the restaurant my husband was told that his outfit was not good enough to eat in the restaurant and he was forced to change into a ugly blue ill fitting blazer. and this in a city that prides itself on its sense of style,

Here’s what you need to know: outstanding meal and worthy of the 3 stars. Ambiance is unparalleled with the rooftop looking over all of Rome The most memorable and jaw droppingly brilliant dishes were the red shrimp, the veal, and the zucchini flower with saffron and caviar. No mediocre courses – no mistakes in execution. Incredible service by Simone. Chef Heinz took the time to come out to each table and warmly Greet them – such dedication after decades of success. Core Food memory for us now, after 15 3X Michelin star meals and dozens of other Michelin starred meals. The elegance place settings are another lovely contribution to the meal. Our meal was $1200 for 2 guests.
