The Castillo family is one of the oldest restaurant families in Central Texas still in business today serving up South-of-the-Border cuisine for more than 100 years. Family patriarch Antonio P. Castillo, Sr. started Castillo’s restaurant legacy when he opened The Aztec Cafe in the early 1930s in downtown Waco. The Aztecs introduced authentic Tex-Mex cuisine to the area, and quickly became a popular place to dine. From 1935 to 1948, The Aztec Cafe served delicious Tex-Mex, and was popular with many Baylor students due to the dance hall in the back of the restaurant nicknamed “The Patio.”
Venerable, family-owned spot serving mesquite-grilled Tex-Mex, with full bar & banquet room.

We had a great time at La Fiesta! The food was fresh, flavorful, and exactly what you hope for from good Tex-Mex. The atmosphere was fun and relaxed—perfect for a casual night out. My queso brisket enchiladas and our Elote Street Corn Dip were delicious! Our waiter was absolutely awesome—friendly, attentive, and made sure everything came out just right. Definitely a spot we’ll be coming back to next time we’re in Waco!
Appetizers came out fast and the main entrée came out soon afterwards. The margaritas are still decent here. No complains at all. The salsa is still on point.
The vibe was like the old Isle of Capri casino meets country.
