While the atmosphere has a clean and modern aesthetic, the sushi was sub par and definitely not their strong suit. Other items were delicious, but our rolls were loosely rolled and misshapen. The rice for the nigiri was small and clearly formed in a mold, and the tuna was rubbery and thin. I think they prefer to use more sauce on their sushi items to cover up the low quality fish. I’m bummed because this place looked so cute!! I think they would have more success if was more like an izakaya and less a sushi restaurant, as that is where their strength lies.

I recently visited this new sushi restaurant and was impressed by how clean and welcoming the space felt. The atmosphere was fresh and modern, and it’s clear the team put care into the setup. Unfortunately, the service didn’t quite match the setting, my drink order never arrived, and I ended up finding a small piece of metal in my miso soup, which I think came from a cleaning scrubber. It really took away from what could have been an enjoyable meal. I truly hope this was just an isolated mistake, as the restaurant has great potential if they can tighten up their service and food safety.

I tried Kouyou Sushi for the first time today and ordered several types of salmon nigiri along with a dessert. Everything was impressive!
The salmon was incredibly fresh and tender, with a buttery texture that almost melted in my mouth. The versions topped with cheese or sauce added a nice twist — the creamy flavor paired beautifully with the richness of the salmon. The rice was perfectly seasoned and held together well without being too hard or too soft.
The dessert was a pleasant surprise — delicate, not overly sweet, and a perfect way to end the meal.
The restaurant was clean and cozy, and the staff were friendly and attentive. Highly recommend this spot if you’re a salmon lover!

The restaurant is super new and very clean/esthetic, but the service was pretty minimal considering we were one of three tables dining in. Food was hit or miss. The ramen was excellent, I was not expecting it to be as good as it was. The sushi was really a mixed bag, some items were great (scallops nigiri was soooo fresh) and others missed the mark (salmon and saba nigiri were super thinly sliced). Considering other sushi options in the area, I’m not sure I’d come back for sushi alone. But the ramen I would come back for. The conveyor belt is also a hit with the kids and makes the dining experience fun (despite the lack of actual service).

I recently dropped by Kouyou Sushi, and it’s hands‑down one of the coolest sushi experiences in Seattle. Located at 823 5th Ave N in the Queen Anne neighborhood, this place stands out. 
Right from the start — the vibe is fun. They advertise themselves as Seattle’s “first double‑track sushi experience,” and they seriously deliver: one conveyor belt for grab‑and‑go plates, and a bullet‑train‑style “mini train” delivering made‑to‑order rolls.  The novelty is more than gimmick — it actually works.
The menu is loaded with great options: you’ll find classic rolls and sashimi, but also creative signatures and fresh takes.  The environment is casual, modern, and perfect whether you’re solo dining or out with friends.
What really impressed me: the food still holds up. The fish was fresh, the combinations interesting, and the presentation fun (yes, I watched the sushi arrive on the little train). The service was friendly and efficient.
If I were to suggest a tagline: “Great sushi + fun delivery system + good vibes”. Whether you’re a sushi connoisseur or just eager for something a little different, Kouyou Sushi is definitely worth checking out. I’ll happily go back.

Delicious and fresh bullet train sushi. The restaurant is clean and staff is friendly, which is always a good bonus to see in any sushi conveyor/bullet train restaurant. The chicken kaarage was also surprisingly flavourful. Definitely one of the better restaurants in the area. One of the most exciting new restaurants in uptown. I hope they expand the roll menu because a lot of the more interesting options had cream cheese.

It was good, but just a tad bit pricy. I didn’t love the California rolls which had too much roe for my liking (all over) and it was not possible to remove & edamame had seasoning and was a little heavy. However, the takoyaki was hot & delicious and the gyoza was very crispy. Ebi niguri and avocado rolls were also great.
They do have a very tight little parking lot behind the building if you are lucky enough to find space. Otherwise, it will be paid parking, street or otherwise.
I ordered takeout, but I think it might have been more enjoyable as a dine in. The waitress was friendly and the place was very clean.

This place was not great. Was recommended by an influencer as a “conveyor belt sushi” that had a “bullet train”. The sushi was mid and even after big orders, it took an enormously long time. I was under the impression that since it was “conveyor belt” that sushi would keep going but it was not. On top of that it was $5 for almost every roll (4 pieces per roll) but they were super full of rice. The tacos were interesting idea but did not fulfill at all. I would not recommend.

Cute atmosphere and a good variety of choices! The fish was fresh but some pieces had odd pairings. Not a lot of traditional nigiri options like i expect at conveyor belt sushi. The biggest problem was the service and timing of everything. We got there right when it opened at noon and immediately ordered about 10 dishes, all raw sushi and nothing complicated. I had a little over an hour before I needed to leave for an appointment and figured it would be no problem since conveyer belt sushi is meant to be fast. Boy was I wrong, i ended up having to leave at the last minute and was still missing 3 of the dishes we ordered. The hostess kindly removed those dishes from our check, but it was unfortunate to leave still hungry!

if i could, i would give the service -1 star! we went in at 7pm on a saturday night for dinner. even though there was entire front row of tables open the waitress made us wait 20 mins to be seated! for some reason, they only had one waitress working on a saturday night?
finally when she sat us down, she gave us no water, no soy sauce bowl, no wasabi, no ginger. just an empty table. before she even sat us down, we asked for water and we still didn’t get anything.
we ordered some rolls but had no soy sauce bowls or wasabi to enjoy it! and STILL no water! 20 mins later we had to chase her down 2 separate times for just the soy sauce bowls and some water!
i literally had to stand with her at the front counter and wait for the water otherwise she would just disappear to the back again for who knows how long!!
we also ordered a drink (ONE drink from fridges) and it took half way through our meal for her to bring it to us! when she finally did, she said “do you still need this?” like we didn’t already pay for it and have been waiting for so long.
since the service was so bad and the meal was incredibly overpriced, we decided not to tip. she doesn’t do much serving and the service she did provide was absolutely awful!!!
as we were getting ready to leave, (never coming here again), the waitress YELLED at us in front of everyone “if you don’t want to leave a tip you should not be eating here”. girl, we would have left you a tip but the service was absolutely horrible!!
i’ve never had a server EXPECT a tip for absolutely terrible service and then YELL at her customers for not giving her a tip! the minimum tip for our meal was going to be close to $20! absolutely did not deserve that at all for the horrible service she gave us!
such a horrible experience!! we might have considered coming back since the place was still new to give it a second try, but now?? not after the treatment we got from the waitress.
