Went to Kaede for the second time last night and was blown away once again. The menu is incredibly well thought out, with delicious fish and attentive service. Every detail is carefully considered, even the plates and sake glasses are unique making the meal feel even more special. I’d highly recommend finishing with the anago and tamago, both of which were very tasty. Kaede is transparent about dietary accommodation limitations, reservation policies, and pricing, all of which are clearly listed on the website before you choose to dine there. I would recommend counter seating if possible!

Kaede is a small, quiet omakase spot with a very calm and simple atmosphere. There’s just one chef, and you can really see the care he puts into every detail. Each piece of nigiri was beautifully made and the quality of the fish was excellent across the board. It feels personal and thoughtful — a great place if you’re looking for an intimate, no-frills omakase experience.

I had heard that getting a reservation at KAEDE is nearly impossible, but I got extremely lucky and snagged a counter seat due to a last-minute cancellation.

It’s an intimate space run by a talented chef and his wife, who handles both serving and kitchen support. Even though they were busy managing the entire floor by themselves, the service was seamless and attentive.

Every dish was beautifully prepared and absolutely delicious—I was thoroughly impressed. I would love to visit again during my stay in Portland, though I know how tough it is to get a table. Highly recommended if you can get in!

[Update/Addition]

We were incredibly lucky to return to KAEDE just a few days after our first visit, this time for table seating. While I personally loved the unique experience of the counter, the table service was equally flawless.

The highlight of this visit was the team’s incredible hospitality. It seems they review their reservations in advance; since this reservation was under my friend’s name, I suspect they were expecting guests they hadn’t met before. They seemed genuinely surprised to see us again, which was a wonderful moment.

Despite how busy they are, both the chef and his partner—who handles everything from greeting guests to seamless floor service—were incredibly attentive. They made sure to explain the dishes in both English and Japanese so that both of us felt comfortable and well-informed.

Also, I must mention the Maitake mushroom Chawanmushi; although it was an optional addition to the course for $8 this time (it was included in our first visit), it did not disappoint at all. It was truly unique and one of the best I have ever had. It is rare to find such high-quality food paired with such genuine care. KAEDE remains the highlight of our trip, and we are already looking forward to our next visit.

phenomenal – only regret is ruining sushi anywhere else. Five star service and they need to forge more stars in the galaxy to edge the fish quality and taste high enough. Can’t recommend enough – loved the chef’s counter experience and watching the chef expertly prepare everything. It was like watching art be made. The nigiri was, of course, perfect, but don’t sleep on the appetizers – the deep fried scallop was a favorite. The thin, maki roll with tuna and green onion was something magical, and it visits me in my dreams. Thank you so much for a perfect night!

I visited Kaede for the tasting menu experience and I can honestly say it was underwhelming and quite expensive. The sushi and dishes served were good, but I felt that I’ve had sushi just as good or better at many of the other Portland sushi restaurants for much less money. This is my honest experience. The staff were very kind and attentive.

SUPERIOR SUSHI SITUATION

If you think you’ve found great sushi elsewhere in Portland you’re probably right, but you haven’t eaten the best until you’ve dined at Kaede. Owner/Chef Izumi Uehara and Executive sushi chef Shinji Uehara (wife & husband) have teamed up to bring you perfectly prepared fish flown in overnight from Japan for the fine people of Portland to enjoy in a Sushi-Kappon experience.

Tips:
– The premium nigiri is a MUST HAVE. Shinji showcases his fish in the most authentic way with little adornments such as jalapeño relish, yuzu jam, and whatnots. He is careful not to overwhelm the delicious melt-in-your-mouth fish with the extra bling he puts with each bite. His knife work is the best I’ve seen in Portland and it comes through in this elevated approach to sushi.

– Try things you normally wouldn’t eat. I despise eggplant and NEVER want to take a second bite of anything related to the nightshade. The NASU AGEBITASHI is Uh May Zing and you will want to devour Chef Izumi’s clever creation.

– Saba Battera is super special here and a steal at only $10 (now $12). This is the only place in Portland other than Murata where I’ve seen it on the menu and this rendition is exquisite.

UPDATE
Came back a year later and it was even better than I remembered. The king salmon sunomono salad was soooo good that we had to order a second before dessert….

Amazing nigiri omakase experience! The quality of the fish matched and even exceeded what I’ve been served at a Michelin star omakase restaurant in Tokyo. The nigiri have the chef’s thoughtful personal touch and I found that these complemented the flavor of the fish very well and were not overpowering. We also really enjoyed the soft creamy chawanmushi that had the perfect amount of truffle and the monkfish karaage was fried to golden brown perfection. The waiter was also very kind, explained everything very well and gave us recommendations that really made the experience special. If you enjoy nigiri this restaurant is a must do experience. I highly recommend Kaede!

I think it’s overpriced. But I’m not a foodie. If you are it’s probably fine. Very high quality though. $150/person for my visit. And I could have eaten more. I received 10 nigiri, miso soup, and some other tiny thing.

The wait to get into this sushi restaurant is justifiable in every way. Each dish that graced our table was beautifully arranged and impeccably sliced. The seafood delicacies seemed to effortlessly melt in my mouth. The waitstaff was attentive and provided top-notch service. The restaurant even sources fish flown in from Tokyo’s famed fish markets, attesting to their commitment to quality.
