Tex-Mex cuisine began in the Rio Grande Valley before migrating up to San Antonio during the 1860’s where a group of women known as ‘The Chili Queens’ began to pop up in the city’s plazas selling chili con carne with tamales, enchiladas, and chili verde. They incorporated cumin into their dishes favored by settlers from the Canary Islands, which still has a strong influence on Mexican food in Texas. Our inspiration comes from the many classic Tex-Mex restaurants including Sylvia’s Enchilada Kitchen, Ninfa’s, Blue Goose, Hugo’s, Herrerra’s Cafe, Chuy’s, Valentina’s Tex-Mex and many more. Jackalope combines Jack’s excellent Central Texas-style smoked meats with delicious Tex-Mex dishes. It’s truly the best of both worlds!

Jackalope Tex Mex & Cantina is a fantastic spot with a comfortable environment and top notch service. The food was the true highlight as every dish we tried was excellent. The enchiladas verdes were rich and flavorful and the rockfish tacos were fresh and bright. Even the chicken cesar salad was a standout because the chicken was perfectly charred and juicy. It is rare to find a restaurant where everything on the table is a hit but this place delivered across the board. I will definitely be back.

Very cute southwestern themed eatery I would visit again. We reserved a table so there was no wait, and our waitress was very nice. The drink she recommended was delicious and strong great presentation seeing streaming hot food coming to my table, and the warm salsa was a great touch only downside was that this server was replaced by a guy who refused to stand at our table long enough to hear our responses to his checking in.

This marks the second visit in 31 hours to experience the best and freshest Tex-Mex cuisine. OMG! The taste is divine.

The owner, John, was so gracious yesterday, and the atmosphere was so inviting until we returned sooner than later.

APPETIZERS ORDERED:
* Grilled Cheese Taco served with a crispy Oaxaca and cheddar cheese, corn tortillas, slaw, onion escabeche, and cilantro
* Chili Con Queso with fresh roasted chilies and queso
* Chips and Warm Salsa prepared as an adobe-seasoned bottomless delicacy.

ENTREES ORDER!
* Cheese Enchiladas with Smoked Brisket Chili Gravy

Torn between 3/4 stars. The food as “good” but just not great. Many of the items were just smoke after smoke after smoke tasting all the same. After eating just felt heavy and blah. The service was very nice and quick, absolutely no complaints with any of the service. The brisket tacos were ok- I thought the brisket was overcooked and semi dry. The queso was alright, nothing overwhelming. The quac was actually very delicious. Overall, I would not go out of my way to come here and I think it’s because I like traditional taco truck good and real texas bbq. Mixing the two and americanize it- just not my thing.

I’m honestly still trying to figure out if we accidentally walked into one of those restaurants where the staff is *intentionally rude as part of the theme.* If so… bravo. Commitment to the bit. If not… yikes.

We visited Jackalope Tex Mex & Cantina on Thursday 3/5 around 6–6:30pm with a group of five. The place was mostly empty with plenty of open tables, so we figured it would be an easy dinner stop. My son-in-law had been there recently with his mom and was even given a **gluten-free menu**, which was great because my daughter has celiac. He had also said the food was amazing and the vibe was cool.

Enter: the bartender/manager (who introduced himself as “Hector”… though I’m not entirely convinced that’s actually his name).

He approached the table and asked how many were in our group. We said five.
“Do you have a reservation?”

No.

The visible annoyance that followed could have powered Seattle for a week.

He sat us anyway, but when my son-in-law asked for the gluten-free menu he had previously been given, the response was a firm: **“No. We do not have a gluten-free menu.”** (Which was confusing since… apparently you did before?)

From there, the service continued in the same spirit:
No eye contact.
No smile.
No friendliness whatsoever.
Just the general vibe that our mere existence was deeply inconvenient.

At one point my husband—who speaks fluent Spanish—tried to lighten the mood by asking for napkins in Spanish. The response we received was **“THERE IS THE DOOR”** in Spanish along with a hand gesture pointing toward it.

Now… in fairness… this *might* have been a misunderstanding because the napkins were near the door and he did bring more afterward. But in the moment it definitely felt like we had just been told to leave the building for requesting napkins.

Before we left, my husband asked if he was the owner.
“No, I’m the manager.”

Asked his name.
“Hector.”

Sure, Hector. Sure.

Now here’s the wild part:

**The food was fantastic.**
Like… legitimately great Tex-Mex. Everyone at the table loved what they ordered.

So the restaurant itself? Great food. Cool place. Potentially awesome experience.

But the service from this one individual was easily the worst we’ve experienced anywhere, ever. It honestly felt like we had personally offended him simply by choosing to eat there.

We left wondering:

Did we unknowingly dine at a performance art restaurant where the staff abuses the customers on purpose?

If that’s the concept, lean into it and advertise it. At least then we’d know what we signed up for.

Sadly, because of that experience, we probably won’t return—which is unfortunate because the kitchen clearly knows what it’s doing.
