
Tex-Mex cuisine began in the Rio Grande Valley before migrating up to San Antonio during the 1860’s where a group of women known as ‘The Chili Queens’ began to pop up in the city’s plazas selling chili con carne with tamales, enchiladas, and chili verde. They incorporated cumin into their dishes favored by settlers from the Canary Islands, which still has a strong influence on Mexican food in Texas. Our inspiration comes from the many classic Tex-Mex restaurants including Sylvia’s Enchilada Kitchen, Ninfa’s, Blue Goose, Hugo’s, Herrerra’s Cafe, Chuy’s, Valentina’s Tex-Mex and many more. Jackalope combines Jack’s excellent Central Texas-style smoked meats with delicious Tex-Mex dishes. It’s truly the best of both worlds!

The owner, John, was so gracious yesterday, and the atmosphere was so inviting until we returned sooner than later.

We visited Jackalope Tex Mex & Cantina on Thursday 3/5 around 6–6:30pm with a group of five. The place was mostly empty with plenty of open tables, so we figured it would be an easy dinner stop. My son-in-law had been there recently with his mom and was even given a **gluten-free menu**, which was great because my daughter has celiac. He had also said the food was amazing and the vibe was cool.
Enter: the bartender/manager (who introduced himself as “Hector”… though I’m not entirely convinced that’s actually his name).
He approached the table and asked how many were in our group. We said five.
“Do you have a reservation?”
No.
The visible annoyance that followed could have powered Seattle for a week.
He sat us anyway, but when my son-in-law asked for the gluten-free menu he had previously been given, the response was a firm: **“No. We do not have a gluten-free menu.”** (Which was confusing since… apparently you did before?)
From there, the service continued in the same spirit:
No eye contact.
No smile.
No friendliness whatsoever.
Just the general vibe that our mere existence was deeply inconvenient.
At one point my husband—who speaks fluent Spanish—tried to lighten the mood by asking for napkins in Spanish. The response we received was **“THERE IS THE DOOR”** in Spanish along with a hand gesture pointing toward it.
Now… in fairness… this *might* have been a misunderstanding because the napkins were near the door and he did bring more afterward. But in the moment it definitely felt like we had just been told to leave the building for requesting napkins.
Before we left, my husband asked if he was the owner.
“No, I’m the manager.”
Asked his name.
“Hector.”
Sure, Hector. Sure.
Now here’s the wild part:
**The food was fantastic.**
Like… legitimately great Tex-Mex. Everyone at the table loved what they ordered.
So the restaurant itself? Great food. Cool place. Potentially awesome experience.
But the service from this one individual was easily the worst we’ve experienced anywhere, ever. It honestly felt like we had personally offended him simply by choosing to eat there.
We left wondering:
Did we unknowingly dine at a performance art restaurant where the staff abuses the customers on purpose?
If that’s the concept, lean into it and advertise it. At least then we’d know what we signed up for.
Sadly, because of that experience, we probably won’t return—which is unfortunate because the kitchen clearly knows what it’s doing.
