World class omakase experience. This was a perfectly executed dinner from the moment that we were greeted on the ground floor, through the welcome bar and at the dinner itself. The setting is unbeatable with epic views of the outside and refined comfortable decor inside. The staff are well practiced and attentive to the perfect degree – always knowing when to fill a glass, change an item, etc. The chefs are so skillful and pleasant to interact with. They were warm and welcoming while efficiently working through 19 courses. The food was exceptional. Every piece was exquisite quality and the preparations were restrained enough to let the primary flavors come through (not soaked in soy sauce, citrus or wasabi – only highlighted with small amounts of complementary flavors). There is no need to mask the taste of these dishes – they were clean, fresh and delicious from start to finish). The price is the price… you know what to expect going in… I left feeling like we got our money’s worth. Would like to go again when the menu turns over in the Spring. I will remember this dinner for a very long time.

This was hands down the best dining experience I’ve ever had and I’ve dined all over the world. The sushi was FANTASTIC. Fresh, simple, inventive. The service was ON POINT. MJ really took care of us and made us feel special. The atmosphere is one of a kind. The view, the hospitality both were unmatched. If you’re thinking twice because of the price, don’t. It’s 100% worth it and I will for sure be back.

Locate inside the Poodle Room bar perched on 89th floor of Fountain Blue casino (67 floor tower). 12X seat intimate room with birds eye view of Strat and Resorts World. 2X seatings 6:00 PM and 8:45 PM. Better than Kame Omakase $500 pp. Better food. Better service. Better environment.

Wow! I had read the reviews and figured it would be at least decent and worth a try, but Ito exceeded my expectations from start to finish. We were staying in the Fountainebleau hotel anyways and figured I’d make a reservation to start off the weekend right. We arrived a little early and were offered a cocktail before seating. The cocktail/waiting area was a speakeasy-ish room near/next to the rooftop bar called the Poodle Room. Once we were escorted in to be seated, I felt like I walked into a James Bond Villain’s lair or conference room. It was a semicircular room with an incredible view of the strip (including the sphere) with the sushi chefs facing you as they diligently prepped the first course. Every course was prepared diligently and with amazing attention to detail. I can’t say I had particular favorite (they were all great). Service was attentive, without being intrusive. Overall a 10 out of 10 and the best Omakase experience I’ve ever had. Yes, its pricey but in line with other Omakase experiences in recent years.

A well hidden gem in an unassuming location, that is awesome and spectacular. The sushi were well curated with the freshest ingredients from Japan and crafted delicately by the chefs. Each dish was served and explained by the chef giving us a greater understanding of the ingredients used.

From the arrival, to the lounge bar, to the Omakase – The experience was exceptional. Won’t spill much here, but wow!
We were early so ordered a drink at the lounge before entering to the dining room, bartender was very friendly and chatty.
The Omakase room is at the top of the Casino, sushi with a view!! Omakase is $400pp, it’s on the higher side but reasonable for being in Vegas in my opinion. The meal consists of 5 appetizer, 12 nigiri + 1 handroll, tamago, 2 dessert. My favorites were the Hokkaido scallop, butter fish, Aji, Botan Ebi, wagyu, amberjack… but honestly we enjoyed everything.
Service was attentive.
I would recommend if anyone is in town who’s looking for a nice meal + setting.

One of the finest dinners I’ve been served all year.
From start to finish, it doesn’t get much better in the US. My favourite fish was the Hokkaido Uni with caviar and Ikura. It was the finest Ikura I’ve ever been served, and I almost licked the dish. Other highlights: Sayori and Kinmedai – two things not on many sushi menus on this side of the world. Nothing was wild – it was mostly traditional, performed as a masterclass.
Our chef and I nerded out over Japanese food, fish, and the extensive preparation techniques Ito uses to create their masterpieces. Even something as simple as Tamago was elevated to demonstrate doctorate level techniques.
The service was attentive, personal, and friendly. There when you needed, blending into the background when not.
If you are looking for a truely extraordinary meal – this is it. When paired with the exclusive atmosphere and the view? This is something I’m going to remember.

I’m a person that seeks out Michelin and James beard restaurants and this is one of the best food experiences I’ve ever had. The cost is well worth it considering the view, food, and experience.
My only quibbles are they charge for water and the intial speakeasy is small, even for a 12 person sitting.
We were lucky that the others attendees (except one couple) were low key and grounded, but could see where it could get annoying if you get in a group with a number of people trying to over compensate and trying too hard to impress

The Good: The Chefs and presentation of each dish was really nice. Tsutuke and Stephen really made the night special as it was my girlfriend and my birthday. We really appreciate the effort of commercializing omakase.
The Bad: Service from the front line. From the busboy to the waiter to the floor management. The service was straight trash for a luxury 5-star hotel offering a high-end omakase. From complaining about serving hot tea from the waiter Ace, to crowning the table incorrectly, to not serving us welcome drinks, to treating my girlfriend and I birthday as a felon when I voluntarily offered to grab proper ID and payment for the dinner. Service was straight trash. And the customers are mainly player card holders of Fontainebleau with lowest tier status. Heavily perfumed couples ordering a cocktail during the omakase is the main vibe of this establishment.
Otherwise the food and chefs are amazing. And the view is great. But the service kills the reputation as a omakase.
