Oh my goodness! I was really craving some great ramen and was not disappointed in what I found! It was absolutely delicious. The depth of flavor in the broth was amazing. Nice and large portions! I had the Tonkatsu broth with pork and my partner had the udon with miso broth and tempura shrimp. Both were just terrific. The service was excellent. Ela waited on us and was so incredibly sweet to explain to us about the flavors of the broth. She’s a keeper for sure! The interior was clean and had fun decor.

This is the absolute best ramen shop I have been to so far and it truly tastes amazing!
We tried the Tonkotsu and that broth is do darn good! I recommend adding the extra noodles to turn it into another meal to take home.

Update 11/2025: multiple visits. I’ve had every ramen and udon dish served here and I love it. Go-to lunch spot.
Third update: Had the Thai spring rolls and chicken katsu ramen. Chicken was delicious. I think they updated the menu a bit, had the option for chicken katsu udon or ramen. I don’t remember that from last visit. So far each ramen dish has been different and distinct enough that it’s been worth trying each one to pick a favorite
Update: second time in 2 weeks! Found myself craving it. Had the tempura shrimp udon noodles this time. Udon are my among my favorite noodles and it doesn’t seem like there are many places in the area you can get udon. Delicious, hot, fresh. Great if you want noodles, and great if you just want delicious hot soup too.
Original review: First time visiting. Very good ramen. Fast service using the kiosk. Spicy level 2 was very manageable and tasty. Will visit again and try another ramen dish.

The crunchy roll is excellent especially with soy sauce and wasabi. We got it as an appetizer and got ramen as the main so we had some to take home. The Tonkatsu is very good. The broth and noodles are really good as is the pork. No complaints about any of it. The atmosphere is chill – good music, very clean. The service is excellent. They are generous with their to go containers. We left with a to-go bowl of ramen and a super cute container for the sushi. The carry out is tops. I’m a sucker for all of these things. And if it matters to you, they have unisex restrooms which puts them all the way up to a five in my book. I will go back!

The spicy crab salad is a steal at a 4 dollar price point for that portion size. If I could add some sesame seeds or furikake, it would be perfect.
The Chicken Katsu Udon and the Tonkotsu Ramen were excellent, and I love the idea of getting to add toppings for a slight upcharge on the kiosk.
The atmosphere was great and the prices were absolutely less than anticipated. This place is going into my lunch rotation.
Finally, the service and staff are good people. I lost an earpod on my visit and came back hours later to find they had kept it for me. That was a pleasant surprise and unexpected kindness. It’s cool to find nice people and good food in the same place. Kudos all around.

I had a great experience at Ichi Ramen in Hixson. The food was fresh, flavorful, and really satisfying. I ordered the chicken katsu ramen bowl, and the portion size was generous and matched the price well. the chicken was crispy and cooked perfectly. the quality of their ingredients is high. good value for what you get (in this economy) and I’d definitely come back again.

The ramen leaned a lot more toward Chinese flavors than Japanese, especially with the chili oil and bamboo shoots, which tasted like Chinese. The noodles were authentic, but the toppings didn’t match the Japanese style. Service was pickup only which I liked, but the tray was left with soup spilled on it, no action was taken even after acknowledging it. On the bright side, the rolls were okay for the price, and the place was bright and clean.

First time to a ramen restaurant and it did not disappoint!! I customized my ramen and my husband a poke bowl. Got the spring rolls and California roll for appetizers. It was all delicious and service was fast. ☺️
