Rabbit in dumplings, so good. The dumplings I had at Cracker Barrel on this trip are sad in comparison. Mushroom stew also good. Hunter stew with venison – meat falling apart, rich hearty sauce on the mash. Bison bugogi, very savory.
Had great talk with owner Mark about his foraging. He has a 100+ acre farm and property for much of what goes in the dishes. The meats have to come from elsewhere (there are reasons he’s not allowed to sell what a raises and then cooks). Makes sense. The mashed root veg contains a mix of foraged roots and potatoes. The hunter stew flavored with forage sumac berries. The man can forage and can cook!
Mark is currently in his food truck but is planning to be in a building space across the street next spring.
Nestled in the heart of Hot Springs, where the Appalachian Trail breathes life into this mountain town, Hunt & Gather Wild Food is a sacred stop for the soul. More than just a food truck—it’s a celebration of ancestral wisdom, wild nourishment, and the deep-rooted traditions of Appalachian culture.
Chef and owner Mark is a steward of something truly special. We had the honor of sharing a meal here, and every dish felt like a story—one told through heritage, earth, and fire.
We savored the Rabbit and Dumplings, rich with Southern comfort and slow-cooked care. The Bison Bulgogi, kissed with ginger and garlic, offered a bold and grounding bite of local Carolina strength. The Laap Pa Trout, dressed in mountain mint and lime, tasted like a cool stream winding through ancient forest. And the Wild Mushroom Stirfry, with its medley of fungi and nettles, was like tasting the forest floor after a spring rain—deep, earthy, and nourishing.
Mark pours heart into everything he does, from the pristine setup of his mobile kitchen to the warmth of his welcome. Whether you’re a thru-hiker, a seeker of real food, or simply someone hungry for something honest, this place is a refuge. It honors the past while feeding the present.
Hunt & Gather is not just a meal—it’s an experience, a reconnection, a prayer of thanks to the land and those who walk it.
Mushrooms were very rubbery, all of the types, and it was overall bitter and bad tasting. Mash is just delicious!
Fixed those mushrooms. Put them in a blender with equal parts light cream, water, chicken broth and a couple spoonfuls of honey. Poured that over the rice in a pot and brought it to a boil. Made an excellent rice dish and with a little extra broth, it makes a delicious cream soup. Which is good because once I got home, I came down with the flu or something and it’s easy to eat.
Thank goodness I had a whole cup of your nettle tea. That and some herbs and elderberry at home seem to have warded this off to where it’s manageable.
All dishes were fantastic!
This is a must visit spot, when in Hot Sorings, NC.
