I’m from Texas, met a friend in Pueblo and wanted to send him cookies for his birthday. I needed an order for next day delivery and Hopscotch Bakery MADE IT HAPPEN!! I’m beside myself with excitement, as they did a phenomenal job, not only with the amazing graphic technique they used on the cookies, the colors they used were on point. I trusted they would do a good job and instead went beyond my expectations. My friend was completely surprised and enjoyed the taste and the arrangement of the cookies. Thank you, gals from Austin, TX!! Keep it going, you ladies are going places!!! Who needs Tiff Treats when you have Hopscotch Bakery!!

Hopscotch Bakery – What Happened?
I’m not sure what’s going on with Hopscotch Bakery in Pueblo, but talk about a letdown. We had friends visiting from out of town and after a fantastic breakfast at B Street Café, we stopped in for what we hoped would be some standout local sweets. Unfortunately, it was anything but.
The chile sugar cookies—once unique and delicious—were barely recognizable (see pictures). And the kitchen sink cookie, which used to be my absolute favorite, was burnt, dry, and tasted like it had been overbaked hours ago. It crumbled apart and not in a good way.
Even worse, the cookies weren’t cheap, and for the price, I expected the quality they used to be known for. Sadly, that’s not what we got. It’s disappointing to see a local favorite lose its touch. Here’s hoping they turn things around.

Hopscotch Bakery is absolutely phenomenal!! I had messed up and not fully placed an order for cupcakes. Not realizing what had happened until the evening of two nights prior to the event. I am located 1 hr from this bakery but they had posted on their website that they would like 48hrs notice but if you’re in a pinch give them a call. I messaged their IG. They responded so quickly! Told me to call the next morning which was a day before the event. They took care of my request, had it done when I arrived 30 min before pickup time. I have yet to try them as the party is in a few hours but I had to brag about how amazing their service was the friendly faces included! They also have many other options such as breakfast, lunch, snacks, goodies, whipped coffee and of course cupcakes. Thank you for the amazing service and going above and beyond to help me out! I am so excited to go back and try new things!

Stopped in to pick up some cookies for a friend as a gift. Carly was helping me. She was extremely sweet and friendly.
I didn’t get anything for myself but i get the 13th cookie free. I didn’t plan on eating more than a bite of my free cookie, but I ended up eating the whole thing because it was delicious!

This is, by far, my favorite bakery in Pueblo. The picture is an apricot scone that is better than any scone I’ve ever eaten. The sourdough is fantastic, the cookies, all of them delicious, and I can even get dog treats there! I’m terrible with names, but the young woman who helped me with dark hair and glasses is super friendly and is a terrific baker! Don’t miss out!

I have been going to Hopscotch Bakery for a while now. I normally always get a Pikes Peak brownie and a couple cookies. Today I went at lunch time and tried a sandwich. It is probably the best sandwich I have ever had. Pictured bellow, yummy!!!! Mary and her staff are amazing, always helpful and courteous.

Very cute bakery. We stumbled by it and we were pleasantly surprised by the variety and the friendly gentleman by the counter. I got macarons, lemon cupcake and a lemon square cookie. My friend got the Pike peak brownie, the love at first bite chocolate cupcake and the carrot cake.
Everything I’ve had so far is delicious!! Even the lavender macaron was really really good. The lemon cookie wasn’t too sweet or very lemony but had the right amount of tart. I would definitely get more of the macarons and that cookie. The lemon cupcake was not as loved as the other two. The center of the cupcake had a big splash of lemony goodness but it tasted artificial. The whipped cream was a little too much for me. I think I would eat this cupcake without the cream topping. The cupcake itself could also do with more lemon than it had.
My friend loved her brownie and carrot cake but did not like the chocolate brownie.

What a cute place! Lovely people working in the bakery and some delicious sweets. There coffee was strong like their baking skills. I will definitely stop by any time I’m in town. Very friendly shop and highly recommended
