We had a wonderful early dinner experience here with Rev as our extremely talented bar tender and Espa as our amazing Server. Wonderful food, great drinks and excellent service. Rev made a “Tuscan Sunset” for me and it was a delicious savory drink like none other. Espa was attentive, courteous and gave us the Best recommendations. Will definitely be back!

Hallow Spirits Distillery Review
Hallow Spirits Distillery offers a delightful spot to unwind and enjoy a bite to eat. The burgers were incredibly flavorful and fresh, making for a satisfying meal. Their selection of local craft beers and liquors is impressive, giving patrons a taste of local brews and spirits.
While we sampled a variety of their spirits, including Bourbon and Agave, we found them to be quite strong with a pronounced alcohol taste. They weren’t as smooth as we had hoped, which might not suit everyone’s palate.
However, the ambiance and atmosphere of the distillery were perfect for relaxation. The staff was exceptionally helpful and friendly, adding to the overall positive experience. Hallow Spirits Distillery is a nice spot for a casual meal and drink, with excellent service and a welcoming environment.

First time here, the drinks were delicious (a little overpriced but so seems the trend these days…inflation, ya know!?). Staffing was short so they were only offering a limited menu but the fry flight and the poke nachos were perfect! So good! Pretty slow on a Tuesday night so we got all of our drinks and food within 5-10 minutes. Our server was also very attentive but I’m sure that’s easier with a smaller crowd. Will definitely be going back!

Place is PRICE but kinda worth it. It’s best to go for like a brunch or event.
They have monthly bartenders classes which I hope to enjoy at least once.

The drinks are great. We ordered half a dozen different ones and the favorite of the group was the lavender moon. The second favorite was the new mexico sky. They were fairly priced too. If we were rating solely on drinks, we would give five stars.
Food was overall good but minor flaws. The Smoked Salmon Blot and the Pork Belly tacos were amazing. An awesome elevated take on bar food. The french fries and elote as sides were good too. Nothing amazing but no complaints.
The 50/50 burger was a bit of a miss. Firstly, it was overcooked and more on the well side when we asked more medium. The bun was over burnt also. The burger patty itself is an acquired taste. With the blend of short rib and brisket, it’s slightly gaimy but it is still good. A regular good old fashioned burger would be a nice to have on the menu too.
Also, the staff here gets the highest rating. We had a rainstorm come down on us in the middle of our dinner on the patio and they handled it like champs. Their cleaning standards feel appropriate. Each table has its own hand sanitizer and they take the mask policy seriously.
We will go back. Comfortably during the pandemic and also after for fun.

I really enjoyed it here! The Shrubber Duckie is absolutely fantastic, the Split It is a little too boozy for me but it was still really good. Finally, the kitchen did a good job of veganizing their gnocchi dish. I’d like to see a little more effort put into their vegan options but overall I had a good experience.

The new food menu at Hollow Spirits is fantastic!! We had balsamic bacon wrapped goat cheese dates, wings, the giant mozzarella cheese log, pasta alla vodka, and the burger with amazing hand cut parmasean garlic cheese fries. Each were presented beautifully with a unique sauce that was to die for, and of course, the drinks are yummy!! I love the fun casual environment, rooftop bar, and now with the upscale food menu, Hollow Spirits is definitely a new fav spot of ours!!

Best grilled tiger shrimp and homemade chimichurri sauce I ever had!!! The lavender moon cocktail was also excellent!! ( Made from lavender vodka, coconut cream, simple syrup,and lemon) Staff was efficient and helpful! View from rooftop bar was perfect for watching the sun set.

Great local distillery and so happy to support during these difficult times. Had the lavender moon and green chile. Both were absolutely delicious and I would definitely order again! We also enjoyed the Altos whiskey the best out of our flight.
