Fish flown in from Japan directly from the auction with a seasonal variety that changes every season. Omakase customers need to make a reservation. Allergies must be made known to us ahead of time. We’re able to accommodate 1-2 specific shellfish allergy, but unfortunately, we are unable to accommodate customers that are allergic to ALL bivalves or crustacean, severe gluten intolerance, kosher, or vegetarian. Came here for my girlfriend’s birthday dinner since she had never tried an omakase experience before and I’m really glad I picked this place. The dinner is an 18 course set that takes about 2 to 2.5 hours. The chefs explain each dish and how best to enjoy it which makes the experience even more enjoyable. Every ingredient was super fresh with many imported from around the world. Pretty much every dish was perfectly executed and the flavors complemented each other really well, taking you on a little journey with each bite. The atmosphere is relaxed and homey, making it easy to just sit back and enjoy. The A/C was also at the perfect temperature. The servers and bussers were very attentive and cleaned up each dish as we finished, even wiping away small crumbs to keep the table spotless. I’d definitely recommend this omakase if you’re celebrating a special occasion.

Ray’s omakase at Hihimanu was a wonderful experience. His use of different ingredients and techniques was creative, entertaining, and delicious. Fish was the freshest I’ve had outside Japan and expertly cut. Even his homemade pickled baby ginger was infinitely better than the standard ginger served at regular sushi restaurants. Ambiance was peaceful and calm. 16 courses took about 2 hours, a nice pace that didn’t feel slow or rushed. Empty plates were cleared and tea cups refilled quickly and efficiently at every course. I highly recommend Hihimanu’s omakase.

My wife and I had a great dinner here last night. Amazing sushi, great atmosphere, the sushi chef makes everyone feel welcome and he makes the best sushi that I have had in Hawaii. The fish is fresh, most flown in from the Tokyo auction. But it’s not just the great fish, the chef is incredibly creative with use of caviar and uni and his own special sauces and spices to top each sushi. It is pricey, but well worth the cost. Also has a great selection of sake.

Absolutely the greatest sushi restaurant I have ever been to and I’ve been to the highest ranked sushi restaurants in New York, LA, San Francisco, Houston, and Miami, and none of those compare to Hihimanu. Ray is an absolute magician his knife skills are unparallel. I have never liked to eat Uni at any restaurant and I could see myself eating just Uni at his restaurant. His selection of sake will rival anything you can get in Japan. If you’re in O’ahu you need to go eat here.

This was our best omakase experience in the US! The 18-course meal was a journey of unique and diverse flavors. Each course offered something different, showcasing the fresh, original taste of every ingredient. From start to finish, the attention to detail and quality was exceptional. An omakase experience. If you are looking for an old school traditional experience, then this is not for you. Chef Ray adds modern twist to the traditional dishes.

The experience is 18 dishes plus dessert. Fresh seasonal ingredients and beautiful presentation. I appreciate chef’s introduction on each dish including it’s origin and execution. At end of the experience, we were offered with additional courses. Unfortunately, we were already so full, I wish I had room for more as there were some interesting rare seafood.

Overall a great value and adventurous experience!
